Looking for a fresh and healthy dinner idea? These Salmon Burgers are packed with protein, omega-3s, and flavour.
Perfect for a quick weeknight meal or weekend BBQ!

Salmon Burgers

Ingredients

4 boneless, skinless salmon fillets (about 550g/1lb 4oz in total, cut into chunks)
2 tbsp Thai red curry paste
thumb-size piece fresh root ginger, grated
1 tsp soy sauce
1 bunch coriander (or chives for those who don’t like coriander) half chopped, half leaves picked
1 tsp vegetable oil
lemon wedges, to serve

For the salad
2 carrots
half large or 1 small cucumber
2 tbsp white wine vinegar
1 tsp golden caster sugar

Method

Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.

Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

Brunch just got a delicious upgrade! This Masala Frittata with Avocado Salsa is bursting with flavour, colour and a bit of spice — perfect for Easter weekend or your next Sunday lunch. Packed with protein and loaded with goodness, it’s the kind of recipe your tastebuds and your body will thank you for. 🍳🥑

✨ Give it a try:
Masala frittata with avocado salsa

Ingredients

2 tbsp olive oil
3 onions
2½ thinly sliced, ½ finely chopped
1 tbsp Madras curry paste
500g cherry tomatoes
halved
1 red chilli - deseeded and finely chopped
small pack coriander (Or Parsley will work just as well!)
roughly chopped
8 large eggs
beaten
1 avocado
stoned, peeled and cubed
juice 1 lemon

Method
Heat the oil in a medium non-stick, ovenproof frying pan. Tip in the sliced onions and cook over a medium heat for about 10 mins until soft and golden. Add the Madras paste and fry for 1 min more, then tip in half the tomatoes and half the chilli. Cook until the mixture is thick and the tomatoes have all burst.

Heat the grill to high. Add half the coriander (or Parsley) to the eggs and season, then pour over the spicy onion mixture. Stir gently once or twice, then cook over a low heat for 8-10 mins until almost set. Transfer to the grill for 3-5 mins until set.

To make the salsa, mix the avocado, remaining chilli and tomatoes, chopped onion, remaining coriander (or Parsley) and the lemon juice together, then season and serve with the frittata.

Looking for a dinner idea that’s packed with flavour and goodness? 🥗 This Chicken Satay Salad is a fresh and healthy go-to that’s perfect for busy weeknights. Try it and let us know what you think!

Ingredients
1 tbsp tamari sauce
(If you don’t have tamari sauce you can substitute with soy sauce)
1 tsp medium curry powder
¼ tsp ground cumin
1 garlic clove-finely grated
1 tsp clear honey
2 skinless chicken breast fillets (or use turkey breast)
1 tbsp crunchy peanut butter (choose a sugar-free version with no palm oil, if possible)
1 tbsp sweet chilli sauce
1 tbsp lime juice
sunflower oil or peanut oil, for wiping the pan
2 Little Gem lettuce hearts, cut into wedges
¼ cucumber halved and sliced
1 banana shallot halved and thinly sliced
coriander
chopped
seeds from ½ pomegranate

Method

Pour the tamari sauce into a large dish and stir in the curry powder, cumin, garlic and honey. Mix well. Slice the chicken breasts in half horizontally to make 4 fillets in total, then add to the marinade and mix well to coat. Set aside in the fridge for at least 1 hr, or overnight, to allow the flavours to pe*****te the chicken.

Meanwhile, mix the peanut butter with the chilli sauce, lime juice, and 1 tbsp water to make a spoonable sauce. When ready to cook the chicken, wipe a large non-stick frying pan with a little oil. Add the chicken and cook, covered with a lid, for 5-6 mins on a medium heat, turning the fillets over for the last min, until cooked but still moist. Set aside, covered, to rest for a few mins.

While the chicken rests, toss the lettuce wedges with the cucumber, shallot, coriander and pomegranate, and pile onto plates. Spoon over a little sauce. Slice the chicken, pile on top of the salad and spoon over the remaining sauce. Eat while the chicken is still warm.

🍽️ Recipe of the Month: Risotto Stuffed Peppers 🍽️

Risotto Stuffed Peppers

Ingredients

4 medium bell peppers, sliced in half lengthwise, seeds removed
2 tablespoons olive oil
½ cup arborio rice
1 cup chicken or vegetable stock, plus a little more in case in case the rice needs it
½ sweet onion, diced
2 garlic cloves, minced
2 ears corn, kernels cut from the cob
1 medium zucchini, diced
½ cup finely grated parmesan cheese, plus extra for sprinkling
1 ½ cups marinara sauce
½ cup seasoned panko breadcrumbs

Method

Preheat the oven to 220deg. Place the peppers on a baking sheet and brush or spray them with 1 tablespoon of olive oil. Sprinkle with salt and pepper. Once the oven hits 220 degrees, roast the peppers for 15 minutes.

Heat a saucepan over medium heat and add 1 tablespoon olive oil. Add onions and garlic with a pinch of salt and cook for 1 minute. Add the rice and cook, toasting it for 1 to 2 minutes. Stir in the corn and zucchini. Pour in the broth and a pinch of salt and bring to a boil, then reduce to a simmer and cover. Cook for 15 to 20 minutes, then stir in the parmesan cheese.

Place the marinara in a baking dish. Place the peppers on top, and cut side up. Scoop the rice into the peppers. Top with the breadcrumbs and an extra sprinkle of parmesan cheese.

Roast the peppers for 15 to 20 minutes. Top with fresh herbs. Serve immediately!

Morningside Remedial Therapy treats chronic pain with FINCH THERAPY, Remedial Massage and Rock Taping, helping you manage pain, prevent injury, while enhancing your physical performance.

In our clinic, we use gentle, non-invasive and effective muscle activation techniques. We will also give you 1-3 simple and quick self-management muscle activation techniques to do at home.

Once your body is in correct alignment, we can give you a deep massage to reinforce the changes made to the muscle length and tension. Pain in your bones, joints and muscles can be unbearable – your sleep is disturbed, you constantly feel tired, rundown and moody. As a result of this you are unable to participate in sport or enjoy your daily life.
