✨STEWED FRUIT✨

Turn those almost overripe fruits into a gut nourishing Superstar🍎🍊🍏

Stewing fruit, especially apples, is not just a great way to clean up the fridge. It’s also fantastic for your gut health.

Pectin is a natural substance, found in apples, and acts as a prebiotic. When stewed, pectin is released from the apple and helps to increase the production of short-chain fatty acids, protecting the mucosal lining of your gut from oxidative stress and the beneficial bacteria colonies living within the lining.

A simple dish that can be a ‘treat’ and a friend to our gut microbiome 🫶🏼

Enjoy stewed fruit mixed into yoghurt, topped on oats, turned into a crumble or straight from the jar 🤭

This is how I prepare it:

🍏 4 medium apples, peeled, cored and cubed
🍑 2 peaches, pitted and cubed
❣️ 2 stalks of rhubarb, trimmed and cut into 1cm pieces
🍊the juice from an orange or lemon
🍯 2-3 tablespoons of honey
🫚ginger or cinnamon is optional if you like spice

Method:
1. In a large saucepan, combining apples, rhubarb, and peaches.
2. Add the juice from an orange or lemon to draw out the pectin and balance the sweetness
3. Cook over medium heat, stirring occasionally, until the fruit breaks down and the mixture reaches a thick saucy consistency. This should take about 15 to 20 minutes.
4. Once the fruit is soft and stewed, removed from the heat and let it cool.
5. Stir in the honey to taste before storing in an airtight container to use throughout the week.
