✨ Wholesome Chicken & Vegetable Soup ✨

Ingredients

- 1 large tomato
- 5 x small white potato
- 1/4 small Chinese cabbage
- 2 stalks of celery
- 2 carrots
- 1 leek
- 1/2 head of cauliflower
- Filtered water (enough to cover)
- Chicken stock (to taste)
- 1-2 chicken breasts (already cooked - I used leftovers)

Instructions

1. Prep the Vegetables:
- Chop all the vegetables into small, even pieces for consistent cooking.

2. Combine Ingredients:
- Place all the chopped vegetables into a large pot.

3. Add Liquids:
- Cover the vegetables with filtered water.
- Add a generous amount of chicken stock for flavour.

4. Cook the Soup:
- Bring the mixture to a boil.
- Reduce to low heat and let it simmer until the vegetables are soft.

5. Mash and Mix:
- Once the vegetables are tender, use a potato masher to mush them up. This gives the soup a creamy texture.

6. Add Chicken:
- Cut the chicken breast into bite-sized pieces and stir it into the soup.

7. Final Cooking:
- Cook for an additional hour on low heat, allowing the flavours to meld.

8. Serve

Feel free to:
- Adjust the seasoning with salt and pepper as needed.
- Add or take any vegetables you like.
- Remove chicken all together and make it a vegetable soup

- Let everyone choose their favourite veggies, and toppings.
- Mix and match to create vibrant, appealing salads that look as good as they taste.
- Kids can help wash, chop (with supervision), and arrange ingredients, making it a family activity.

We do this quite often, and every time we add and swap ingredients for variety. Whether it’s switching up the ingredients or trying new dressings, there’s always something new to explore!

1. Healthy Eating: Incorporating more veggies can help everyone get essential nutrients. This is also good for gut health, thanks to the fiber and nutrients in fresh vegetables.
