✨ GF Grass-Fed Lamb Pasta (Slow Cooked) ✨

Ingredients
- 1 x grass-fed lamb roast
- 2 x whole garlic granules
- 1 x medium brown onion, finely chopped
- Celtic sea salt, to taste (start with about 1 teaspoon)
- Passata, enough to cover the meat (shown here is how much I used for a large slow cooker)
- 2 teaspoons mixed dried herbs
- 2 x Gluten-free pasta packs (as shown), cooked according to package directions
- Grated Parmesan, for serving

Note: Salt and passata amounts are flexible—adjust to your taste and the size of your lamb roast.

Method
1. Place the lamb roast in the slow cooker. Sprinkle with garlic granules, chopped onion & celtic sea salt.
2.Pour the passata over the top until the meat is just covered & sprinkle mixed dried herbs (I chose these brands shown for the passasta on purpose for no nasty ingredients)
3. Cover and cook on high for 8 hours, or until the meat is tender and easily pulled apart.
4. About 15 minutes before serving, cook the pasta in salted water according to package directions. Drain and set aside.
5. While the pasta cooks, remove the lamb from the slow cooker and pull it apart with forks. Discard any large fatty pieces.
6. Return the shredded lamb to the sauce in the slow cooker.
7. Layer the bottom of a serving pot with some sauce, then mix the cooked pasta through so it’s well coated.
8. Dish the pasta, top with the lamb sauce, and sprinkle with Parmesan.

Serving Suggestions
- Extra Parmesan on the table for sprinkling.
- A simple green salad partners beautifully.

✨ Italian Bipi with a Twist ✨

A beloved Italian family tradition with a protein and fibre boost addition from lentils and chickpeas. Simple, tasty, and versatile enough for a snack or a main dish. Paired with anything you like!... Paired with crusty bread is the Italian way 👌

Ingredients
- Olive oil
- Capsicum sliced
- 1 brown onion, sliced
- Celtic sea salt, to taste
- 425 g chickpeas, drained and rinsed
- 425g cooked lentils drained and rinsed

Method

1. Heat a saucepan with olive oil. Add the capsicums and brown onion, and sauté until they start to brown and soften.

2. Add more olive oil so the vegetables are nearly covered, and season with Celtic sea salt to taste. Let it sit and fry until all softened.

3. Toward the end of cooking about half hour before, fold in the lentils and chickpeas and adjust salt.

Measurements are to your liking - It depends on how many people you want to serve, how salty you like it and also how much oil you want in the dish.

Two years ago, I wrestled with a cluster of health challenges. What I thought was just “detox issues” and everyday tiredness turned out to be much more:
• Immune issues & inflammation
• A liver not detoxifying & recycling carcinogens
• Hormones recycled instead of excreted
