Comfort food made simple 🤍🥔🍗
This one-pot dinner is somewhere between a chicken pot pie and a shepherd’s pie & it’s completely gluten free + absolutely delicious 🙌
✨ Method:
• Dice 1 onion, 1 leek & 3 sticks of celery and sauté until softened
• Add 500g diced chicken breast & cook through
• Pour in chicken stock with 2.5 cups water, ¾ cup coconut cream, 2–3 tbsp flour of choice, salt, pepper & 1–2 tbsp mustard
• Simmer until creamy & thickened
Meanwhile, boil & mash your potatoes 🥔
Spread the mash over the top, sprinkle with grated cheese 🧀 & bake until golden and crispy 🤤
