Hello I'm Mandy Healey,
Welcome to my 'Gluten Free Living Made Easy' page where you will discover that Going Gluten Free is a healthy lifestyle change and that life without Gluten does NOT mean deprivation! I am a Certified Gluten Educator as well as a Clinical Hypnotherapist, Wellness Life Coach and a Master 'Neuro Linguistic Programming' Practitioner (NLP). My Gluten Educator Qualifications come from my training with Dr Tom O'Bryan & Dr Peter Osborne. • 'TRUE' Gluten Free, and of utmost importance, the understanding of
• ‘Cross-Reactive Foods and Proteins', foods that cross react with gluten, a process called cross-reactivity. There are foods that do not contain gluten, however the body reacts to them as if they do; so therefore the irritation, inflammation and damage to your body can be equal to that of gluten. Whether you are ‘new’ to going Gluten Free or if you are already following a strict gluten-free lifestyle, yet you still suffer from symptoms related to gluten - this could be your answer! I got myself all excited today… went and bought Craig his favourite pizza 🍕 ingredients… made a gluten-free grain- free pizza base… then this happened 🤣
Tomorrow I will have another go at making a gluten-free and grain- free base 😆

A perfect example of how easy it is to get Glutened from cross-contamination.
This spatula was washed in the dishwasher, put back in the drawer and it was just by luck that I turned it over to see that it was not washed properly.
Had I used it in my cooking, the gluten from a previous recipe would have gone into mine. And as easy as that, Glutened!

WHAT's Happening In Mandy's Kitchen?
I made these a while ago, now I will fine-tune the recipe.
Nothing beats a fluffy sponge that’s been dipped in a home-made chocolate made from cacao powder and honey and rolled in desiccated coconut.

I was craving Lamingtons. I had not had one for over 15 years (as I have an allergy to grains). Never in my wildest dreams did I think I could make Lamingtons (that taste like the original Lamington) that were made from grain-free and gluten-free flours as well as dairy-free. Well I have and I am very happy with the results 🙂
By the way, this was my very first attempt! I swapped ingredients from the traditional recipe and replicated it using flours derived from the casava plant and almonds instead.

They turned out moist, juicy, chocolatey and to top it off, absolutely delicious... with that gorgeous hint of vanilla to finish them off 😉

Casava flour is my new favourite to work with.
In this recipe I combined both casava flour and almond meal (with a few other ingredients). The next batch I will make just a little bit sweeter than this lot.

The 'Traditional' Lamington sponge is a very creamy and yellowish colour on the inside... mine are more a chocolatey colour as I used maple syrup and the almond meal was not blanched, it was milled with the brown skin (that covers the white flesh of the almond). This is what gave it it's darker colour.

Is this recipe going in the cookbook?
