Brrrr 🥶 ok I know it’s not as cold as other states.
Now is the time to nourish the body, get it ready for the cold and flu season.
How better to do it than with a big pot of ministrone 🍲
Top with one of our gut friendly pesto’s and OMG that is a cure for anything.

Wow I feel like winter has arrived. I love the smell of a hearty meal cooking.
So today I’m sharing my rendang curry recipe with you.
This Malay style curry is not too spicy 🌶️ it has a fragrant coconut flavour.
👉🏼dice up 1 kg of grass fed beef. Fry off in batches, then set aside.
👉🏼in same pan fry off a whole pkt of my rendang curry paste on low for 6 minutes.
👉🏼add beef back into the paste, then add 2 tablespoons of bone broth and 2 cups of water.stir till all combined.
Put lid on and cook on low for 1/2 hours.
👉🏼take off the lid, and at this point check for flavour!!! I added 1 tablespoon of palm sugar for my taste but this is optional.
👉🏼leaving the lid off cook for a further 40 min , you want the liquid to reduce down to as much as possible. It meant to be a dry curry. Curry is ready when meat is tender.
👉🏼serve with rice, fresh sliced chilli and I love a few sprigs of coriander.

A quick meal 😃 using medicinal chef curry paste.
This was so delish !!! I ate 3 times this week.
Super easy, super tasty and super nutritious.
➡️ first poach 2 chicken thigh fillets in 2 cups of water, 1/2 onion, 2 cloves of garlic, I am piece of ginger and turmeric, and 1/4 of a lemon. Keep broth, (strain)
➡️ in a sauce pan , cook soba noodles for 4 minutes, then refresh under cold water.
➡️ in sauce pan add 3 tablespoons of curry paste and fry off for 6 min.
➡️ add the strained chicken broth.
➡️ add 2 tablespoons of sesame oil, and 4 tablespoons of tamari.
➡️ add 1 tin of coconut milk.
➡️ add broccolini and chicken and cook for 4 min.
➡️ in a bowl put in your cooked soba noodles, then pour of soup mixture.
➡️ serve with a slice of lemon and a sprinkle of shichimi togarashi seasoning 😘

The nights are cooler, and it’s a great time to start cooking meals with lots of winter vegetables.
Using my green curry paste you can cook a vegetarian curry in 20 minutes.
The whole family would love this , not too spicy but full of flavour. No sugar or preservatives added.
I only use olive oil. This is a nutritious meal full of antioxidants and anti inflammatory ingredients.

The kids will love this chicken 🍗 it’s my tandoori spice marinade, not spicy 🌶️ but full of flavour.
Just mix 2 tablespoons of paste with 4 tablespoon of yogurt. Marinade for at least 2 hours.
Then air fry, bake, or bbq.
Serve with rice or veggies.

Tonight is perfect for a chicken curry, this curry with only 4 ingredients and 20 minutes to prepare.
It’s so easy!!! My curry paste ( no sugar, no fish sauce no bad oils) with chicken and a few veggies.

I love to mix 2 tablespoons of curry paste with 2 tablespoon of crunchy peanut butter and half a tin of coconut cream to make the most amazing satay sauce.
