Mother's day is fast approaching!

My eldest daughter just made waffles for everyone for breakfast. I was a bit hungry and started eating before I remembered to take a picture. They were delicious. Maybe more so as I didn't have to make them and she cleaned up after too ❤️

Butter Chicken Risotto

I wasn't expecting to like this but it's a 5⭐ from me. My daughter said 'It's the best risotto i've ever had!'
No leftovers tonight.
My mother-in-law is visiting and is super impressed with the risotto and the new Thermoserver. She wants to make the risotto for her next bowls event.

Apples and plums made a very quick crumble for dessert tonight. Loving all the comfort food at the moment, brings back childhood memories of family meals around the table.

I used a crumble recipe from cookidoo using nuts, oats and raw sugar. I added a touch of vanilla and lemon juice to the fruit, no sugar needed. TM7 custard tonight. Even over ten years later I'm still amazed at how quick and easy it is to whip up fresh custard in my Thermi. Now my nearly 12 year old can make it for me.

There is a bit leftover which will be perfect for breakfast with a bit of Greek yoghurt.

I did buy it but had a few problems downloading onto my phone. My chrome browser kept shutting down and it disappeared each time. Finally managed to save it to my phone and made the Dijon Chicken & Greens, served with mash. My fussy four year old barely touched it but the other three cleaned their plates. My eldest said it tasted like mayonnaise. All that homemade mayo she eats.
Might try the butter chicken risotto next although the kids are asking for the pulled chicken & gravy

When you go shopping to Kmart with all your children you might walk out with a multi plate waffle maker too.
Cooked banana choc muffin mix(cookidoo recipe)
Used up the ripe bananas that had been sitting on the bench for a few days and a bit of Easter chocolate.

It's one of my favourites and delicious for apple pies etc

I will be using it to make a stone fruit pie, using up all the fruit in the fruit basket my kids have decided they no longer want to eat!

Also a brilliant way to use up left over sour cream from taco night.

One of my skills is using random items from the fridge(or fruit bowl) so they don't end up in the bin. If you don't have this skill Cookidoo can help you.

I lack a few other skills and I missed the opportunity to earn a second bowl again 🙈 so here I am using pre-clean a lot. You don't have to be like me and can get a second TM7 bowl by hosting a cooking experience before April 30th

The plan was to have pulled pork for dinner tonight but I got it in the slow cooker a bit too late today. Tomorrow's dinner sorted.

My four year old knocked the hanging basket on the floor just as I was starting on plan b.

Luckily beef tacos are quick and easy to make. I try and always have homemade taco seasoning in the cupboard. I'm not keen on the hard taco shells and knocked up a batch of soft flour tortillas instead. Can't beat fresh homemade tortillas and they're super cheap to make. My kids love getting to pick what they put in their tacos. Seren wanted a picture of hers before she added the taco mince.

I haven't located my cutter+ yet but I recommend it if you don't have knife cutting skills like a chef. Also makes grating cheese a lot quicker

Sausage and mash with caramelised onion gravy

I grew up in the UK, a charcoal barbeque was the norm and often resulted with uneven temperature and burnt sausages. I now prefer mine like this although I know it's not healthy 🙈 my kids sausages were cooked normally. No fail mash potato 👌 I jazzed up the gravy with caramelised onions in the Thermomix® and a splash of red wine added at the end.

I finally found time to get in the kitchen again!

Started off with hot cross bun french toast using the Kmart mini waffle machine

Hot cross buns(using my own recipe) a batch of fruit and chocolate.

Mini bunny cob loaves, made this up as I went. I would've been happy with just those for dinner, made a low fodmap pumpkin risotto too.

If you have young kids I hope you all survived the sugar rush, highs and lows 🙈😄

Leftovers and making meals go further are a big focus for our family at the moment. I think we’re all feeling the pinch with the cost of living and fuel prices.

Last night’s dinner was a perfect example… cauliflower cheese pasta using leftover cauliflower cheese from the night before, plus some broccoli that needed using up. Nothing fancy, just making what we have work.

Cheese béchamel is a regular in our house, it’s one of those staples you can turn into so many different meals. I’ll change it up depending on what I’m cooking… a bit of mustard, some stock paste, confit garlic, different cheeses. It’s simple but so versatile.

Having a Thermomix has honestly made a big difference for us. It means I can cater for allergies, whip up smoothies, and make healthier treats whenever we need them.

I still think back to Covid days in a small town when shelves were empty, I could just make what we needed. Brown sugar, golden syrup, caster sugar… problem solved.

And funnily enough, I haven’t bought peanut butter or vegetable stock since getting my first TM5 back in 2014.

A little bit about me...

Hi, my name is Alexa. I'm a qualified chef working in the industry for 20 years and a mum to three girls. Most recently, I’ve become a Thermomix Consultant in Newman, WA.

I’ve enjoyed cooking from a young age and decided to become a chef when I was 16 and living in the UK. My culinary journey has taken me around the world - from the UK to America and now Australia.

I purchased my first Thermomix a Tm5 in 2014, not long after having my first child, which was a godsend! Fast forward to 2019, after a recent move to Newman, an opportunity arose for me to become a Thermomix Consultant and upgrade to a Tm6! I am loving being a Thermomix Consultant! I get to meet some amazing people and love seeing all the amazing food my customers create. Plus, I get to be creative and experiment with food, whilst also being able to make meals that meet all my family needs. My husband is lactose intolerant, pescatarian and avoids sugar. My youngest is anaphylactic to eggs, middle child is a fussy, sensory eater and the eldest is my mini me, total foodie.
