A little about me - i love making things that require fermentation. I find the transformation of food through microbes magical and endlessly fascinating.
So I make sourdough bread, krauts, kefir, and I love making fermented chilli sauce.

And this year, I'm entering my bread into the (Brisbane's annual show) bread making comp.

I'm pretty happy with today's bake. Do you have any unusual hobbies?

Struggling to get enough fibre in your diet? Give psyllium jelly a go.

There are loads of fibres you can use for specific gut needs, but psyllium is our all-rounder, workhorse.

Cheap and easy to use. I've made a jelly that you can use like a jam or add to natural yoghurt or blob onto your porridge or ....

3tsp psyllium husks + 125ml juice
Shake, refrigerate for at least 10 minutes.
Done

I used a passionfruit in this batch plus juice from a mandarin. Sweet, tangy and delicious.

The easiest and fun nutrition tip for your Wednesday -
Choose colour 🌈

It's grape and plum season in Australia, so please don't miss out on these gorgeous bundles of colourful goodness.

Plums are super rich in special phytonutrients called anthocyanins. Think deep red, purple & blue.

Their health benefits include reducing risk of heart disease and cancer, plus they have the ability to reduce your inflammatory markers.

A 2024 article in BMJ journals looked at these anthocyanins in relation to cognitive function. They found promising evidence for procognitive, anti-inflammatory and neuroprotective properties.

Plus we all know what plums and prunes are also good for πŸ˜‰

Is this the best food innovation of 2024?
I present you with beetroot in a jar!!

I know, it's revolutionary, but how has it taken til 2024 for someone to do this?
I have so many questions

Is it just me, or does anyone else hate opening tins of beetroot? Messy, beetroot juice everywhere, finding the right size container to transfer it into. Just so much drama!

Or do you have a better new food innovation?

Big Blueberry News - community service announcement 🫐🫐🫐
FREEZE your berries

Blueberries are ridiculously cheap in Australia at the moment, i paid $2 a punnet today. A few months ago they were $8.99, I even saw them for $12.99 for 120gm.

So for every punnet you buy, how about you freeze one. You'll thank me later 😘

I wash them, lay them out on a tray, and freeze for 30min. Then, into ziplock bags. You probably don't need to do this? but I want them loose.

What's the most you have paid for blueberries?

Rich in fibre, vit C and a very special colour compound (polyphenol) called proanthocyanidin, which is a brilliant prebiotic (food for good gut bacteria) and excellent for brain health too

Do you start your day with a coffee?

There's so much joy in that first cuppa, whether it's in bed, taken on your morning walk, in the car or simply at home.
But sadly, for some, starting the day with a coffee can also wake up the IBS. Introducing a caffeine free alternative -

It's made from roasted chicory, which is a plant from the dandelion family. And it's an incredibly rich source of the prebiotic fibre called inulin. This means it feeds the beneficial bacteria in your gut. And it's delicious.

They have also added some organic Australian roasted carob, giving it a hint of delicious chocolate flavour.

I love having a cup after dinner. It satisfies any desires for chocolate 🍫 .
We are super fussy here in the gut clinic about selling products and this one ticks all the boxes. There's an instant coffee style product and a ground version for your coffee machine. Let me know if you want to try it!
