Coconut Flour Crumbed Chicken 🥥🐓

Try this recipe for a simple & delicious meal or snack!

Chicken Thighs
Egg
Coconut Flour
Salt
Spices & Herbs (optional, add to flour & salt before coating chicken)
Coconut Oil

• Use meat hammer to tenderise chicken
• Cut pieces into your preferred size
• Beat whole egg in a bowl & dip pieces into egg
• Combine coconut flour & salt (& spices if adding them) in a seperate bowl or plate
• Dip egg covered chicken in coconut flour & salt mixture
• Lightly tap off excess flour
• Heat pan or skillet & add a generous amount of coconut oil to pan
• Cook chicken pieces at a medium heat on both sides until cooked through, taking care not to overcook the chicken.
• Serve hot or cold with your choice of sides and sauces (our favourites are pesto or mayo with garden salad or veggies, also delicious on its own as a snack)

With the summer temperatures starting to cool off a little, you may notice your coconut oil will start to solidify coming into winter. This does not harm the oil and you can melt it down as many times as you need without damaging its health properties. Coconut oil naturally solidifies under 26 degrees.

Pop your bottle into a mug or bowl of warm water to melt it down. DO NOT put in the microwave as this will destroy it. Or simply leave your jar in a warm spot or out in the sunshine to keep it melted during the day ☀️🥥
