Eat the rainbow 🌈 Try this grilled chicken quinoa bowl packed with flavour 🍅

Ingredients:
425 grams Chicken Breast (boneless, skinless)
2 tbsps Extra Virgin Olive Oil (divided)
2 tbsps Lemon Juice (divided)
2 tsps Italian Seasoning (divided)
3/4 cup Quinoa (dry, rinsed)
1/4 cup Feta Cheese (crumbled)
1/2 Cucumber (large, diced)
2 cups Cherry Tomatoes (halved)
1/4 cup Red Onion (finely chopped)
1/2 cup Pitted Kalamata Olives (chopped)

Directions:
1. Marinate the chicken in the fridge for at least 30 minutes with half each of the oil, lemon juice, and Italian seasoning.

2. Cook the quinoa according to the package directions.

3. Gently toss the feta in the remaining oil, lemon juice, and seasoning.

4. Meanwhile, preheat the grill to medium-high heat. Grill the chicken for eight to 10
minutes per side, or until cooked through. Let rest for five minutes before slicing into bite-
sized pieces.

5. Divide the cooked quinoa, chicken, cucumber, tomatoes, red onion, and olives evenly into bowls. Top with the feta mixture. Enjoy!

As the warmer weather is on the horizon, this Yogurt and Berries Sweet Potato Toast is a perfect breakfast option 🫐🍓

Ingredients
🍓1 Sweet Potato (medium)
🍓1 cup Unsweetened Coconut Yogurt
🍓2 cups Frozen Berries (defrosted)
🍓1 tsp Cinnamon

Directions
1. Trim the pointy ends off the sweet potato then lay it on its side on a cutting board. Slice
lengthwise into 1/4 inch (1/2 cm) slices

2. Pop the sweet potato slices into the toaster and toast two to three times, depending on
your toaster setting. If you do not have a toaster, set your oven to broil and cook in the
oven on a lined baking sheet for three to six minutes per side

3. Place the sweet potato toasts on a plate and divide the yogurt, berries, and cinnamon

A perfect Winter Warmer recipe 🍲

Ingredients:
✨2 Carrot (large, thinly chopped)
✨3 Garlic (clove, minced)
✨1 1/2 cups Dry Red Lentils (rinsed)
✨5 cups Vegetable Broth
✨2 tbsps Tomato Paste
✨2 tsps Curry Powder
✨2 tsps Ginger (fresh, minced)
✨1 1/2 cups Baby Kale
✨1/2 cup canned coconut milk
✨1 tsp lime juice (optional)

Directions:
1. Add the carrot, garlic, lentils, broth, tomato paste, curry powder, and ginger to a slow
cooker and stir to combine.

2. Cover and cook on low for six hours or on high for four hours.

3. Stir in the kale, coconut milk, and lime juice. Let it stand for five minutes, or until the kale
has wilted. Divide evenly into bowls and enjoy!

Here are some of our favourite foods to add to meals or eat separate to easily increase protein intake:

1. Eggs! Hard boiled eggs are great to eat on the go🥚

2. Cottage Cheese. Very high in protein and a great addition to any snack.
