Artichoke is a very underappreciated superfood. It packs in more than twice the antioxidant power of and is also a great source of magnesium, vitamin C, dietary fiber and iron. It’s also got cancer fighting polyphenols like chlorogenic acid, luteolin, apigenin and—unique to this green vegetable—cynarin. Perhaps that’s why a study out of Europe found that women who ate artichokes regularly had an incredible 66% less risk for endometrial cancer. As a side bonus, cynarin a powerful antioxidant for the liver and has been proven to help with liver . So do consider adding more artichokes to your regular list of green and especially for your next detox.
