This week the Men’s Cooking Group made Salmon patties with lemon and herb mayonnaise, seasoned baked potato wedges and finished the meal off with an orange self-saucing pudding.

Salmon patties originated in the American South during the early 20th century, particularly thriving in the 1930s Great Depression as a cheap, nutritious, and shelf-stable survival meal. They became a staple after physicians discovered canned salmon was a cure for the niacin-deficiency disease pellagra.

On behalf of the Hospital Auxiliary and the Cohuna District Hospital, we thank the community for your continued support. To those who bought raffle tickets, donated goods, and assisted with logistics on the day, we applaud your passion and resilience.
The raffle and stall collectively raised just shy of $3,000. An outstanding effort which will purchase a new set of scales for renal dialysis.
