I always keep a few “can’t think, can’t cook” meals up my sleeve for when life happens, it hits the fan, or I just want something fresh and easy.
One of my go-to lunches or dinners is rice paper rolls with whatever’s in the fridge.
Save this for your next “what the hell am I eating?” day…recipe below 👇 * you can add an any protein/meat here…go with what you love…this sauce is EVERYTHING!
Veggie Loaded Fresh Rice Paper Rolls.
Rice Paper Rolls Filling….
Fresh mint, coriander or basil
Finely shredded carrot
Finely chopped capsicum
Shallots finely sliced in lengths
Finely shredded purple cabbage
Avocado sliced
Cucumber finely sliced in lengths
Dipping Sauce….
120ml Tamari
1 - 2 garlic cloves crushed
1 tsp sesame oil
Juice of 1 lime
1tsp honey
Toasted Sesame seeds
Prepare rice paper rolls as per packet directions and fill with your selection of ingredients.
Fellow jar ladies…here’s your permission to continue hoarding jars for future use 😂
Combine all dipping sauce ingredients in a jar and shake to combine. Store leftover sauce in fridge for a few days.
Toast sesame seeds in frying pan until brown. Let cool, shake over complete rice paper rolls and store the leftover seeds in a jar for up to 6mths. I often do this with pine nuts as well. Such a great time saver!
