Monday Meal Prep! 🙌💪

I’ve been super slack with posting my meal prep as of late- I’ll just blame School Holidays….

⭐️Protein Pancakes (traybaked)

These are my standard breakfast base, which ive shared numerous times. I normally freeze and get out when needed to serve with berries and yoghurt

⭐️Creamy Tomato and Salami Fettuccini

I subbed the salami for chicken breast that i steamed and shredded to make it more macro friendly

⭐️Wholemeal Crumpets 🤤

My go to pre gym snack is a wholemeal crumpet with homemade peanut butter and half a banana. Now that the hubby has also got on board with it, we are going through so many packets per week. With this recipe, I made 14 crumpets and it cost less than half of what a normal packet (of 6) costs 🙌

Tonight’s dinner was a suggestion combo from two of the ladies in my Thermo team- I'll have what She's Mixing: Erin Keleher Thermomix Consultant and Mixmaster Jo - Thermomix Consultant….. and it did not disappoint!!!

If you’ve listed to the Agirlagayandathermo then you’ve heard them talk about the Aldi Pork Knuckle 🤤🤤🤤🤤 I haven’t eaten standard roast pork since I was pregnant (bad memories of the smells) but this I could definitely go for again!

I served it up with the mash and gravy from the ‘Chicken with Mashed Potatoes and Gravy’ as suggested by Mixmaster Jo and again this will be added to my rotation list. I actually think it was the best tasting mash I’ve ever done in the TMX! I also steamed the brocolini over the potatoes whilet they cooked and did a quick Apple Sauce in the TM6☺️

It was a girls night Friday night whilst the hubby was away so what better excuse did we need for a ‘fakeaway’ pizza night 🍕🍕🍕🍕

The girls always have so much fun making their own- usually done in a funny face shape but I forgot to get photos before they were cooked.

As you can see from the photos- I do like a bit more topping on mine 🤤 plus we made a garlic and cheese pizza to share.

🔥 OPEN COOKING 🔥

For those that have been following for a while, know that I cook my Bolognese on the stove to and use my TMX with the prep (onion/garlic Speed 5, 3 secs and in to the Pan, what ever veggies I have Speed 5, 3-5 secs).

So last night, whilst the sauce finished on the stove, I decided to try the ‘Open Cooking’ for the pasta. It was so simple, I put water in the bowl and turned on the kettle mode before adding the pasta and setting the open cooking mode to go 👌

A simple and delicious lunch today with a sauce that will 🥊 you in the face 🥵

I steamed and shredded some chicken- such an easy way to add to whatever lunch you are having. Then…. I made the sauce from the Korean Fried Chicken 🤤

This was a new one for me, but after listening to an episode from ‘A Girl, A Gay And A Thermo’ podcast, I had to give it a try. If you haven’t had a listen yet, then get on board. I'll have what She's Mixing: Erin Keleher Thermomix Consultant Agirlagayandathermo

CHICKEN LAKSA

It’s not the prettiest looking dish but boy do the flavors pack a punch 🤤 Both girls even loved this one (no extra chilli for them).

This was my first attempt at a Laksa and with how easy it was, I’ll definitely be doing it again.

I subbed the asparagus for Brocollini and used coconut cream instead of milk (because that is what was in the cupboard).

I also shredded the chicken at the end 👌 As you can see, it’s a massive serve so i think the servings are off (Cookidoo says 2).
