We got this Melbourne! What ive noticed during lockdown is that many more people are exercising! Our street was a ghost town, but now, there's always someone walking, running, riding bikes. I love it! We must see the positives in situations or you'll be consumed by the negative 🖤

Chocolate, date & Coconut energy balls

INGREDIENTS

1 cup Medjool dates, pitted (about 10 large)

1/2 cup cocoa powder

1/4 cup honey

1 cup medium desiccated unsweetened coconut plus more for rolling

1/4 cup quick cooking rolled oats

1 tsp. pure vanilla extract

1/2 cup unsalted cashews

INSTRUCTIONS

Place all ingredients in a food processor and whirl until the mixture starts to pull together. Roll into balls and roll in additional coconut. Store in a tight sealed container in the fridge or freezer.

Healthy Lemon & Coconut protein balls 😋😋😋😋😋😋

Ingredients

65 g (1/2 cup) cashews raw

45 g (1/2 cup) desiccated coconut

lemon juice from half a lemon

lemon zest from 1 lemon

2 tbs rice malt syrup (or honey)

coconut extra, for rolling

Instructions

Add all ingredients into a food processor, blender or Thermomix. 

If using a blender, blitz until all ingredients are finely chopped and the mixture comes together.

If using a Thermomix, press Turbo until the mixture is finely chopped and comes together. 

Take large teaspoonfuls of the mixture and roll into balls (see notes). 

Store in the fridge for up to 5 days or in an airtight container in the freezer for up to 2 months.

Calories: 128kcal | Carbohydrates: 7g | Protein: 2g | Fat: 10g | Saturated Fat: 6g | Cholesterol: 0mg | Sodium: 7mg | Potassium: 118mg | Fiber: 1g | Sugar: 3g | Vitamin C: 0.2mg | Calcium: 9mg | Iron: 1mg
