My SIBO Frozen Desserts eCookbook is a digital cookbook filled with mouth watering and SIBO friendly ice creams, popsicles, granitas, sorbets, ice cream cookie sandwiches, ice cream sauces and more. ⁠
Each recipe is coded with which SIBO diet it's suitable for (eg. If you’re looking for a SIBO friendly Anzac Biscuit recipe for this coming Friday, I’ve got you covered with this tried and tested recipe. It’s suitable for Phase 1 Semi Restricted on the SIBO Bi Phasic Diet by .nirala.jacobi_thesibodoctor as well as being free from grains, gluten and dairy and it’s also vegetarian.

Happy baking and lest we forget. 🌹

INGREDIENTS
1 1/2 cups almond flour
1/2 cup desiccated (shredded) coconut
1 cup walnuts (chopped finely in a food processor)
1/3 cup butter or coconut oil (if DF)
1 tsp bi carb (baking) soda
3 tbs honey
1 tbs water
1 tsp vanilla

METHOD
1. Preheat your oven to 180C/350F. Line a baking tray (sheet) with baking (parchment) paper. Set aside.
2. In a large mixing bowl, place the almond flour, coconut and walnuts. Mix together and create a well in the middle of the mixture.
3. In a small saucepan, melt the butter (or coconut oil) and honey together. Take the saucepan off the heat and add the bi carb (baking) soda and water. Stir until foamy.
4. Pour your honey and butter mix into the well in your dry ingredients. Add the vanilla. Mix until well combined.
5. Take dessert spoons of the mixture and roll it in your palm into a ball, as firmly as possible. Be patient, this mix holds together well but needs a little handling. Place the ball on your baking tray (sheet) and flatten out a little.
6. Place in the oven for 10-15 minutes, or until golden brown.
7. Remove from the oven. Leave to cool on the baking sheet and don’t handle until they have hardened.

Why not start with a modern take on an old favourite - a shrimp cocktail. Main course is a delicious baby snapper with lemon roasted potatoes. You can keep it simple with a green salad on the side or jazz things up with my beetroot and feta salad.⁠
To finish, nothing beats my chocolate and coconut truffles.⁠

Are you following a low FODMAP or SIBO diet and want to enjoy a Hot Cross Bun this Easter? I’ve got you covered! Here in Australia, HCBs are serious business but they are sadly off limits when following a SIBO diet. That's why I hit the kitchen to create a low FODMAP diet recipe and a SIBO bi phasic diet recipe so you've got two delicious options to choose from. Sadly dried fruit is off limits on both diets, but I've incorporated all of the delicious spices that make the HCB so delicious and they're a fabulous alternative.⁠

One of the HARDEST things I found on my SIBO diet was giving up sweet treats. I am a self confessed sweet tooth, so giving up sugar was reaaaallllyyy hard for me.⁠

Chocolate IS possible this Easter when you have SIBO! If you’re willing to make your own (which is actually pretty easy), you can still enjoy the chocolate feels with the fam this Easter but without the gut irritating challenges of sugar laden commercial chocolate.
