✨ Healthy fibre and protein packed chilli ready in 20 minutes, recipe below 👇
1. Heat olive oil in a large frying pan or pot over low medium heat, sauté onion and garlic then add spices and stir for one minute before adding mince and cooking until brown (add a splash of water if needed to prevent burning or sticking).
2. Add the coriander stems (finely diced), water, stock powder, beans, Passata, corn and capsicum. Simmer on medium for 20 minutes.
3. Top with chopped coriander leaves and serve with rice, in tacos, burritos etc.
Store in the fridge for up to 3 days or in the freezer for 3 months for a quick mid week lunch or dinner!
