Pumpkin, Zucchini and Feta Fritters (GF)
NOTE: Recipe makes 2 serves (8 fritters)
Ingredients:
250g zucchini (grated, excess liquid removed)
250g pumpkin (grated)
70g feta (crumbled)
3 eggs
4 tbsp flour
2 tsp cumin
1/4 pce red onion (finely diced)
salt & pepper
Method:
Preheat the oven to 180 degrees celcius and line a baking tray
Combine the grated zucchini, pumpkin, flour, cumin, feta and red onion.
Crack the eggs in a bowl and mix well
Pour the egg mixture over the vegetable mix and combine. Season with salt & pepper
Spoon the mixture onto the lined baking sheet making 8 even fritters
Cook for 20-30 minutes till cooked through and golden brown.
Serve for breakfast with poached eggs, or as a snack.
1 serve = 4 fritters
How to remove excess liquid from grated zucchini; place grated zucchini in a clean tea towel sprinkle with 1 tsp of salt & mix - set aside for 10 minute. Squeeze the grated zucchini to remove all liquid.
