{Recipe: Pork Sausage Patties with Cabbage}
I promised to share this recipe from my meal plan this week, and didn't manage to get it together til now - sorry to be slow! Lots on at the moment, getting ready for our events!! This is a really simple recipe that is super quick to make - you use stock to simmer the herbed pork patties and cabbage, which makes them soft and flavoursome. I serve with sauerkraut (use a small amount of plain kraut and stir it through the cabbage to 'hide' it if your family is new to eating it), sour cream (homemade), and green veggies. Yum!

Ingredients:
1 garlic clove
1 tsp fresh oregano leaves, or 1/2 tsp dry oregano
1/2 tsp fresh thyme leaves, or 1/4 tsp dry thyme
2 large sage leaves
500g pork mince (free range, pastured pork)
2 Tbsp homemade Tomato Sauce or Nomato Sauce (optional, recipes in Life-Changing Food cookbook)
Β½ tsp honey
1 tsp sea salt
1/2 tsp freshly ground black pepper
500g pork or chicken stock
500-700g cabbage, finely shredded
Thermomix Method:
- Place garlic, oregano, thyme and sage to TM bowl and chop 3 sec/speed 7.
- Add mince, Tomato/Nomato Sauce (if using), honey, salt and pepper and mix 15 sec/Reverse/speed 3 or until thoroughly mixed.
- Pour stock into a large frying pan and heat.
- Shape into 10-12 patties and place into stock as it is heating. Once stock is boiling, reduce heat to a simmer and cook patties in stock for 10 minutes, covered.
- Turn patties over and add cabbage to pan. Cover and cook another 15 minutes or until cabbage is soft. Remove lid and cook down if you want to reduce stock and brown patties.
- Season to taste, and serve with sauerkraut, sour cream, and your choice of vegetables.
Conventional Method:
- Finely chop garlic, oregano, thyme and sage (if using fresh herbs) by hand or in a food processor.
- Place garlic and herbs in a large bowl, with mince, Tomato/Nomato Sauce (if using), honey, salt and pepper, and mix well.
- Continue with recipe above.
Storage:
Store in fridge for up to 3 days, or freeze covered with a little stock for about 3 months.
