πŸ›’ INGREDIENTS
β€’ 1 large zucchini, grated
β€’ 1 medium brown onion, finely chopped
β€’ 1 medium red capsicum, finely chopped
β€’ 150 g shortcut bacon, fat trimmed, finely chopped
β€’ 30 g grated parmesan cheese
β€’ 1 tbsp dried mixed herbs
β€’ β…“ cup fresh flat-leaf parsley, plus extra to garnish
β€’ Β½ cup (75 g) white self-raising flour
β€’ 8 medium eggs, lightly beaten

πŸ‘¨β€πŸ³ DIRECTIONS
1️⃣ Preheat oven to 180Β°C. Lightly spray a 22 x 12 cm loaf tin with oil and line with baking paper (leave paper slightly overhanging).

2️⃣ Place grated zucchini in a clean tea towel and squeeze out as much liquid as possible. Transfer to a large bowl.

3️⃣ Add all remaining ingredients. Season with salt & pepper and mix well to combine.

4️⃣ Pour mixture into prepared tin. Bake for 40–45 minutes, or until set in the centre (test with a knife).

5️⃣ Let sit in tin for 10 minutes, then lift out and cool slightly on a wire rack. Slice and serve. Garnish with extra parsley if desired.

Creating meals that fuel your goals without sacrificing flavour!

This lighter take on a classic stroganoff is high in protein, packed with veggies, and served with zucchini noodles instead of pasta.

πŸ‘‡ Full Recipe Below

Ingredients:
β€’ 2 tsp olive oil
β€’ 500g beef fillet, fat trimmed, thinly sliced
β€’ 1 white onion, thinly sliced
β€’ 200g Swiss brown mushrooms, sliced
β€’ 200g button mushrooms, sliced
β€’ 2 garlic cloves, crushed
β€’ 1 tsp paprika
β€’ 1 tbsp Worcestershire sauce
β€’ 200ml salt-reduced beef stock
β€’ 60ml (ΒΌ cup) light sour cream
β€’ 100g baby spinach
β€’ 2 x 250g zucchini noodles
β€’ Steamed green beans, to serve
β€’ Baby parsley leaves, to serve

Method:

1️⃣ Heat 1 tsp olive oil in a large non-stick frying pan over high heat.
Cook the beef in 2 batches for about 2 minutes or until browned. Transfer to a plate.

2️⃣ Add remaining olive oil to the same pan over medium heat.
Cook onion for 5 minutes or until softened.

3️⃣ Add mushrooms and increase heat to high.
Cook for 3–4 minutes until browned.

4️⃣ Stir in garlic and paprika. Cook for 1 minute until fragrant.

5️⃣ Add Worcestershire sauce and beef stock. Bring to the boil.

6️⃣ Reduce heat to low. Return beef to the pan and simmer gently for 1–2 minutes until heated through.

7️⃣ Stir through the light sour cream and baby spinach. Cook until spinach has just wilted.

8️⃣ Prepare zucchini noodles according to packet directions.

Serve stroganoff over zucchini noodles with steamed green beans and sprinkle with parsley.

High protein. Lower carbs. Big flavour. πŸ’ͺ
