Harvest crunch cookies — a nourishing little bite that feels like comfort, but fuels you with goodness. đŸȘ

Recipe
1/2 cup raw sliced almonds
1/2 cup raw pumpkin seeds (pepitas)
1/2 cup unsweetened coconut flakes
1/4 cup honey
1 large egg
1 teaspoon vanilla powder
1/4 tsp sea salt
150g good quality dark chocolate

Method
Preheat oven to 180 degrees celsius and line baking tray with unbleached baking paper.

In a large mixing bowl, add the sliced almonds, pumpkin seeds, coconut flakes, honey, egg, vanilla powder and sea salt.

Mix until well combined.

Scoop out portions of the mixture using a 1/4 cup and flatten with your hands. Try and press them together tightly.

Bake the cookies in the oven for 11-15 mins, or until they get golden brown.

Cool completely on the baking tray. They will stick together when cool.

Melt chocolate over double boiler. Dip the back of each cookie in the melted chocolate. Place on flat surface line with baking paper (or use the same tray as before).

Chill the cookies in the fridge for at least 30 mins so the chocolate sets.

Optional: Add 1/2 cup soy crisps for extra protein; add a sprinkle of sea salt on the top of the chocolate for an extra salty kick.

Keep in the fridge for up to 2 weeks, but trust me, they won’t last that long!

Exposing your eyes and skin to natural sunlight within 30 minutes of waking helps regulate your cortisol rhythm — which directly impacts how well you fall asleep later that night.

This doesn’t mean staring at the sun ☀

Ashwagandha isn’t for everyone.
Yes, it can lower cortisol — which is great if cortisol is high.
But if you’re already burnt out, wired-and-tired, or running on low cortisol, it can actually make things worse.

A heightened nervous system doesn’t just need to be “calmed down” — sometimes it needs to be supported and rebuilt as well.

I get a lot of clients telling me they self-prescribe magnesium, but then say it doesn't make any difference.

Magnesium plays a role in 300+ biochemical reactions in the body, supporting sleep, muscle function, stress response, energy production, and heart health. But different forms are absorbed and used differently.

Here's a basic guide to give some insight in choosing the right form of magnesium.
