Boujee Bouli - quinoa( plant protein) pomegranate, mint, parsley, mint, edamame beans because I can, spring onions, freshly dry roasted pumpkin and sunflower seeds with tamari …..my take on a Sunday sesh with the fam as well shawarma, tzatziki, pickled red onion and baked sweet potatoes. Fresh batches of jamu tonic using freshly harvested turmeric from my garden. Anti inflammatory, anti oxidant and can support the immune system. Health hacks- simmer your Turmeric juice for 10-15 minutes with black pepper to increase its absorption and anti inflammatory properties, add honey for some sweetness and antibacterial benefits, I add fresh lemon juice for vitamin c once cooled and add coconut water if you like for hydration. Add 20-30mls to a cup of hot water, add mineral water to 20mls as a fresh spritz. Turmeric is in season and unfortunately so are colds and flus. It won’t cure them but it will certainly support your immune system.

This year's World Environment Day falls on Thursday, June 5th, 2025. The focus for this year is on tackling Plastic Pollution. My daughter, , is currently in her third year studying Marine Science at university and is deeply committed to protecting our oceans and marine life for future generations. Plastic has infiltrated marine ecosystems and bird habitats alike. Even plastics produced 150 years ago are still present today, tragically harming and poisoning our magnificent marine creatures. To raise awareness of this critical issue, I will be at the Coffs Harbour Surf Club beachfront, armed with a bucket to collect plastic waste along the beach from McCauleys and back, ensuring it is disposed of properly. If you’re interested in joining me for a stroll and a chat, I invite you to come along starting at 10:30 AM on Thursday, June 5th. The tide will be low, and the vibe will be high.
