Greek inspired dinner 🧿🇬🇷

The other night I made roasted lamb shoulder and it came out perfect. It was the first time I cooked it and I was so happy with how it turned out. Soft tender and super tasty!

I made a Greek salad with fresh tomato’s, cucumbers, red capsicum, red onion and Greek style feta. Generous amount of olive oil and some salt. I have traveled to Greece two times and the best Greek salads to me always have red capsicum!

Homemade tzatziki always is a winner. I grated fresh cucumber, a few spoons of greek yogurt and grated fresh garlic. Make sure to drain the cucumber otherwise the tzatziki will be watery. I do also love a tzatziki will fresh dill also!

Yogurt pita is so easy to make and delicious to grab all those part of the meal and tie it all together. It only takes 3 ingredients to make self raising flour, baking powder and Greek yogurt.

And lucky last chippies.

This meal is very nutritionally balanced and gets the tick of approval from my 2 year old toddler and my 8 month old baby 🤍

The days are long, messy and fulfilling.
Don’t forget to have fun. Even though your giving them a childhood don’t forget to give yourself a motherhood that’s exciting and fun 🤍

This chapter is meant to be celebrated 🙏🏻
