👩🏼🍳Harvest Dish - Warm roast pumpkin salad
👩🏻🌾Homegrown
• Pumpkin
• Bantam Eggs
• Parsley
• Thyme
A nourishing, colourful salad with fresh garden produce.
Ingredients
1. 2 cups roast pumpkin (homegrown, cut into chunks)
2. 1 small red onion, thinly sliced
3. 2 tbsp sun-dried tomato strips
4. 50 g feta cheese, crumbled
5. 1 ripe avocado, sliced
6. 2 homegrown eggs, boiled and quartered
7. A handful of fresh parsley, chopped
8. 1 tsp fresh thyme leaves
9. 2 tbsp olive oil
10. 1 tbsp balsamic vinegar or lemon juice
11. Salt and pepper to taste
Method
1. Roast pumpkin in olive oil, salt, pepper, and thyme until tender and golden. Let cool slightly.
2. In a large bowl, combine roast pumpkin, onion, sun-dried tomatoes, avocado, and parsley.
3. Gently toss with olive oil and balsamic vinegar (or lemon juice).
4. Add crumbled feta on top.
5. Finish with boiled egg quarters and a sprinkle of extra parsley.
Recommendation: Serve slightly warm for best flavour.
