Leftover rice. Use or lose?
Leftover rice turned into a simple salad that was used as a side salad for dinner, and lunch today.
2 cups cooked rice
2 spring onions
1 bunch broccolini *blanched and chopped
4 cornichons *finely chopped
1 tbsp mayo
2 tbsp pickle brine
1 tbsp evoo
Swap mayo for;
- Yoghurt
- Tahini
Swap broccolini for;
- any other green veg
Pickle brine for;
- red wine vinegar
- lemon juice
