Leftover rice. Use or lose?

Leftover rice turned into a simple salad that was used as a side salad for dinner, and lunch today.

2 cups cooked rice
2 spring onions
1 bunch broccolini *blanched and chopped
4 cornichons *finely chopped
1 tbsp mayo
2 tbsp pickle brine
1 tbsp evoo

Swap mayo for;
- Yoghurt
- Tahini

Swap broccolini for;
- any other green veg

Pickle brine for;
- red wine vinegar
- lemon juice

I’m a tragic saver, and actually relish the opportunity to make something from nothing.


Yesterday I had some sad looking pumpkin, sweet potato & cauliflower. So I roasted them with onion, garlic, cumin and turmeric, and turned the veg into a delicious soup with red lentils and bone broth.
It took such little effort, and made for extra lunches & a meal for my mum.

Tell me the truth… do you chuck or save?
