If you’ve been to see me in clinic there’s a fair chance I’ve babbled on about breakfast!
It can be a really simple tweak to your diet that enhances the rest of your day (especially if it’s a savoury breakfast!)
Improved satiety ✔️Increased energy (all day) ✔️ Better blood sugar regulation ✔️ just to name a few benefits.
These random veg plates are usually in high rotation at my house. A quick and easy one pan meal plus you get a couple of serves of veg before the day has even kicked off, some protein and some healthy fats & gut loving fermented foods.
Suss out what’s in your crisper (broccoli/broccolini, sweet potato, pumpkin, zucchini, tomato, spinach all work well) sauté/lightly steam in some butter or olive oil, salt & pepper (+ mixed dried herbs, garlic & onion powder if you like) to taste, throw in a couple of eggs, a sprinkle of feta and tablespoon or 2 of sauerkraut.
