Yesterday morning I started cooking soup at 6:45am (on a school day).

The start of spring has got me feeling super energised and inspired and I am seriously cleaning up my health (yes, even nutritionists need a reset sometimes... we're only human & share many of the same life challenges).

So, to ensure that I had healthy meals on hand, I decided to make chicken, mixed bean, lentil and veggie soup! 😋

It saved me yesterday and again today at lunch.

It is just me, or are oats receiving a bit of backlash right now??

Whole rolled oats are nutritious. I enjoyed a bowl this morning prepared with almond milk, topped with sunflower seeds, pumpkin seeds and half a banana 🍌.

Topping the oats with the seeds ( protein and fats) makes them more blood sugar friendly.

Rolled oats are high in beta glucan, a soluble fiber shown to lower LDL ("bad" cholesterol.

Oats act as a prebiotic fiber, supporting gut health and beneficial gut bacteria.

Can we stop hating on oats? ✋️
