Recipe of the week - A naturopath favourite!
🥗 Mint, Feta & Watermelon Salad
Ingredients (serves 4):
4 cups watermelon, cubed (seedless if possible)
1/2 cup feta cheese, crumbled
1/4 cup fresh mint leaves, torn or chopped
2 tbsp extra virgin olive oil
1 tbsp fresh lime juice (or lemon juice)
Salt & black pepper, to taste
Optional: 1/4 small red onion, thinly sliced
Optional: 1/4 cup cucumber, thinly sliced or diced
Optional: Balsamic glaze, for drizzling
Instructions:
Prep the watermelon:
Cut the watermelon into bite-sized cubes and place in a large mixing bowl.
Add feta and mint:
Gently add the crumbled feta cheese and mint leaves. If you're adding red onion or cucumber, mix those in as well.
Dress it:
In a small bowl, whisk together olive oil and lime juice. Season with a small pinch of salt and freshly cracked black pepper.
Combine:
Pour the dressing over the salad and gently toss everything together. Be careful not to break up the watermelon or feta too much.
Serve:
Serve immediately, or chill for up to 30 minutes before serving. Optional: drizzle with balsamic glaze for a sweet and tangy finish.
Tips:
Use a very cold watermelon for the most refreshing result.

Don’t overdress—watermelon releases liquid as it sits.
This salad doesn’t store well, so it’s best eaten fresh.
