Ok, time for another easy peasy throw together lunch recipe (or dinner, or breakfast if you like!)
MISO SOBA SOUP!
In a pot fry off:
Glug of olive oil
4 minced garlic cloves
Decent k**b of minced ginger
2 TBS miso paste (I used white miso)
2 stems spring onions
Add 500ml water and bring to the boil
Add buckwheat soba noodles and cook as per instructions (usually around 5 minutes)
In some butter fry off 2 large flat mushrooms
In the last 2 minutes of cooking the noodles, add decent handful of chopped pak choy and sliced wombok cabbage
Serve with mushrooms on top, a handful of coriander and a drizzle of chilli oil
