I’m raising money for Pancreatic Cancer research! This is a very personal cause for me!

The world lost an amazing woman in 2017 - my Mum!

Her courageous fight against pancreatic cancer for over 5 years was inspirational! She was a gladiator against an unfair opponent!

Pancreatic cancer has the highest mortality rate of all major cancers!

I’m walking 142km in September to raise money for pancreatic cancer research to help more people get diagnosed earlier and raise the 5 year survival rate above 12%

These were a huge hit at my cooking class last night at NuActive Health
Carrot cake muffins heathy enough to eat for breakfast!!
1 cup self raising flour (gluten free or regular)
1 cup almond meal
2tsp baking powder
1 tsp cinnamon
3 medium carrots finely grated (leave the skin on)
1/2 cup brown sugar
4 eggs
1tsp vanilla
Icing
40g light Philadelphia cream cheese
100g icing sugar
Walnuts to serve.
Mix ingredients together and place in 12 lined muffin tins and bake for 20min in a 180 degrees fan forced oven. Or until cooked through. Remove from over and let cool. Mix 100g icing sugar with 40g of light cream cheese. Top muffins with icing and sprinkle with crushed walnuts to serve.

Need an easy, minimal prep dinner on a budget while trying to be healthier?
I have you covered! 🌯

While Mexican may have some healthier takeaway options on the market, a single meal can cost over $20, (and that doesn’t include delivery fees and service charges if you’re using a meal delivery service!)

Try this budget friendly ‘Fakeaway’ burrito.

Serves 10 (freeze the mince mixture in portions for a super easy quick dinner next week)

Take 1kg lean beef, chicken or turkey mince, and bulk out with 400g kidney beans or black beans as well as some finely diced veggies like 1 zucchini, 10 button mushrooms and 1 capsicum! Flavour with 1 packet of salt reduced taco seasoning and then add 1-2 400g cans of chopped tomatoes (depending on how saucy you like it). You can also add dried chilli if you like it spicy. I like to wilt a bag of baby spinach into the mixture too, to add some more greens.
Mix and match with your favourite salads, like corn, avocado, tomato and lettuce. Finally, assemble on a soft tortilla or wrap and top with light cheese, light Greek yoghurt, and or salsa! All of that with an extra salad on the side is less than $5 per person.

And you can freeze the mince leftovers to make a quicker version next time!

I love my job! I got to teach 4 wonderful sell out groups this fortnight in my healthy cooking school! We had 3 private classes and 1 public class.

They learnt how to make quick and easy healthy meals the whole family loves. Meals and snacks full of colour, nutrients and flavour!! I include loads of time saving tips as well as learning portions and so much more!!

Every class is different, everyone is welcome (12 years up). All dietary requirements can be accommodated. Please DM me if you would like to come to a class. Or book a private class for 1-12 people.

This recipe is my healthy twist on the traditional beef meat pie which is loaded with hidden veggies. Shhh no one will notice if you don’t them! This one is sure to be a family favourite!

BEEF MEAT PIE
🕑50 minutes 👩‍👩‍👦‍👦Serves 4-6

INGREDIENTS
BASE
2 cups mash potato, cold
1 cup plain flour (gluten free if required)
1 egg, beaten

FILLING AND TOPPING
1 tbs olive oil
1 onion, diced
500g extra lean beef mince
100g mushrooms, finely diced
1 large carrot, roughly chopped
1 zucchini, roughly chopped
400g can tomatoes
3tbs worcestershire sauce (gluten free if required)
4 tbs gravy powder
1 stock cube
2 sheets puff pastry (gluten free if required)
Tomato sauce to serve
Side salad/veggies to serve

METHOD
BASE
1. Preheat oven to 180 degrees fan bake In a bowl, combine flour and potato. Add egg (leave a small amount to cover the pastry top of the pie).
2. Using your hands, work the mixture until you have formed a dough.
3. Press the dough into a lined pie dish to form the base of the pie. Alternatively, line the pie dish with thinly sliced potatoes.
4. Cook the base of the pie in the oven for 20 minutes.

FILLING AND TOPPING
1. Saute the onion and mince in a large non-stick fry pan
2. Add the mushrooms and cook until softened
3. Add the carrot, zucchini, worcestershire sauce and stock cube to a high powered blender. Blend mixture until smooth then add to the meat mixture. Cook for 20 minutes
4. Add gravy powder and cook until thickened. Add water if the mixture is too thick.
5. Add meat mixture to the pie dish and top with puff pastry. Brush the pastry with remaining egg mixture. Cook for 20 minutes or until puff pastry is golden
6. Serve with your favourite salad or veggies, and top with a drizzle of tomato sauce
