For those that don't know, baking and cooking has been a part of my life since I was around 8 years old.

I would cook cakes, biscuits, desserts etc practically every weekend for years and my grandfather was my guinea pig, trying all my creations (good and bad)!

I did work experience at a French patisserie as I was seriously considering a career as a pastry chef, but the 3am starts were not appealing. (My teen self would never have believed I'd get up at 4am to teach 5am yoga classes 😅).

In more recent years, my baking has taken a back seat (not cooking as I cook from scratch nearly every single night).

With the changes I have recently made to my work schedule so that I now have saturdays off and now have 2 consecutive days off for the first time in 15 years!! I can now bring baking back into my life!!

Sticky date scrolls - yum!!

"Every day, you have two choices:
To focus on what's wrong or to embrace what's right. Choose gratitude. Choose joy. Choose to see the beauty in the little things, and life will become even more Incredible than you imagine." - The universe

I choose gratitude and joy today. What do you choose?

What a great time to share some health facts on cacao - right at Easter!

Cacao (“ka-kow”) is the raw form of cocoa. Both forms have many health benefits, although Cacao has more!

Yes chocolate can be good for you, but it has to be the right kind and minimal sugar to reap these benefits:

🍫Blood sugar balancing – Cacao specifically can help keep our blood sugar levels under control
🍫One of the highest food forms of magnesium! Good for relaxation and reducing PMS
🍫Can elevate mood – natural antidepressant
🍫Can help migraines/headaches (can also cause them if sensitive to caffeine or theobromine)
🍫Antioxidant level higher than red wine!
🍫Decrease total cholesterol and fat in the blood
🍫Stimulates immune function
🍫Anti-inflammatory
🍫Can protect against dental caries (raw cacao with no sugar)
🍫Can enhance exercise capacity

Cacao definitely is a health food that should be part of everyone’s daily diet, ensuring you are NOT using it as an excuse to eat sugar filled commercial chocolate.

Most days I make a hot drink with cacao, turmeric and chai spices for my fix of cacao!

Chia (“Cee-ya”) is a seed that most of us are familiar with - it’s been around in Australia for a while and has been grown here for the past 10 + years.
But why is this tiny little seed so good for us?

🟣It’s full of omega 3 – although it’s not as bioavailable as fish oil is it still provides all the benefits of omega 3
🟣It’s a complete protein meaning they contain all the essential aminos similar to that of animal protein. 1 tablespoon of chia will give you 2g of easily digested protein
🟣An amazing source of fibre that helps soften and bulk stools
🟣They can help reduce cholesterol, reduce blood pressure and assist in balancing blood sugar levels
🟣They are high in antioxidants

If you are wanting to include chia seed oil into your diet it should never be heated as it’s a very delicate oil. Only use in dressings or smoothies.

Chia “eggs” are a very good alternative if vegan or allergic/intolerant to egg in cooking/baking.

I regularly enjoy chia puddings for breakfast. This one is topped with h**p seeds, slivered almonds and raspberries and I added banana later.

I have a failsafe recipe for chia puddings. Comment "YES PLEASE" if you would like my recipe.

Turmeric has been a hot topic for a few years now, specifically the active component curcumin. Although, turmeric has been used in traditional medicine in India dating back 4,000 years.

The main health benefit curcumin provides is its anti-inflammatory effects in the body.

But did you know that for curcumin to be well absorbed into the blood stream and to be the most effective in the body, Piperine (a major component of black pepper) needs to be added to achieve this. Adding a fat further enhances absorption.

So, when you are adding turmeric to your cooking, using an oil, butter or ghee and some black pepper will ensure you get more out of your turmeric.

Turmeric supplements on the market are now including black pepper to ensure the best utilisation of curcumin.
