Nothing beats a warm, comforting apple pudding 🍎✨

With apples in season, it’s the perfect time to make the most of fresh, local produce and turn it into something delicious for the whole family.
Simple ingredients, full of flavour, and a great way to enjoy fruit at its best.

Apple Pudding:

Ingredients: (Serves 6)
1400g apples
250ml milk
5g dry yeast
70g melted butter
90g flour
120g egg
65g sugar
0.5g salt

Optional additions:
Frozen blackberries, blueberries or raspberries
Vanilla Yoghurt to serve

Method:

Core and slice the apples to approximately 3mm thickness.
Warm the milk to 32 degrees celsius, or body temperature. Then add yeast and allow to proof for 30 minutes.
Whisk the melted butter, flour, sugar, egg, and salt into the milk.
Pour this over the sliced apples, making sure the apple slices are entirely covered.
Transfer the pudding mix to the cooking pan and allow to proof for 1 hour.
Bake on the middle shelf for 1 hour and 10 minutes, or until the apple is tender and deeply browned on the surface. Allow to cool slightly before serving with vanilla yoghurt.

👋 Meet Simon West – Senior Exercise Physiologist in Burnie

If you’re part of the Burnie community, chances are you already know Simon, but we thought it was time to properly highlight one of our most experienced and dedicated team members.

Simon is an Accredited Exercise Physiologist who works across the North West Coast. He has a special interest in chronic pain management and brings a wealth of knowledge to this complex area, supported by his Masters of Science in Medicine (Pain Management).

With extensive experience in musculoskeletal injury rehabilitation and chronic disease management, Simon takes a well-rounded and practical approach to helping people move better and feel stronger.

What makes Simon’s background unique is his 15 years as a Registered Nurse, including time in Critical Care/Intensive Care, as well as experience as a Psychiatric Nurse in Queensland. This diverse clinical experience shapes the way he supports clients by looking at the whole person, not just the injury or condition.

🎓 Qualifications:
• Bachelor of Applied Science (Human Movement Studies)
• Masters of Science in Medicine (Pain Management)
• Diploma Health Science (Nursing)
• Pilates Institute of Queensland Certification (Levels 1, 2 & 3 Equipment)

📍Axe the Tax on Health 📍

Exercise physiologists are essential in helping people manage conditions like diabetes, cardiovascular disease, obesity, and mental illness - yet these services are still taxed.

Right now, Australians pay an extra 10% GST every time they see an Accredited Exercise Physiologist (AEP). Essential healthcare shouldn’t come with added tax.

What this means:
• Higher costs for patients managing chronic illness and injury
• Barriers to access for vulnerable communities
• Disincentives to use effective, preventive care

Exercise physiology is already recognised across Medicare, DVA, NDIS, and private health insurers - it’s time the tax system reflects that.

Leap Health proudly supports ESSA in their campaign to remove GST from exercise physiology services and improve access to care for all Australians.

From 28 April 2026 (today), a national petition will be launched calling for this change.

Ilka joined our team a few months ago and felt like part of the family from the very beginning. We’re excited to now officially introduce her to all of our wonderful patients here on socials! 👣

Ilka holds a Bachelor of Health Science (Honours) and a Master of Podiatric Practice from La Trobe University graduating in 2012. Originally from Victoria, she made the move to Hobart in 2025 and has quickly become a fantastic addition to our clinic.

Kyle joined our Coastal team in 2025, but he’s certainly no stranger to Leap Health. After graduating, Kyle began his journey with us at our Kingston and Huonville clinics, where many of our clients and team members first got to know his passion for physiotherapy and patient care.

Since then, Kyle has continued to grow both clinically and professionally, bringing his experience and energy to our Coastal Physiotherapy team.

The Great Pe**er MND Walk - 21st July to 01 Aug 2026.

This walk, steps off on Tuesday 21st July 2026, and is in memory of Lyndon James Petterwood aka “Pe**er” and Kevin Wayne Tibbles aka “Dobby” who lost their lives to MND.
The route will travel from the Devonport RSL to the Hobart Cenotaph via towns along the route totaling more than 300kms in 10 days.
Motor Neurone Disease (MND) has touched the Military Brotherhood Military Motorcycle Club in a very tangible and profound way. They have lost two valued members over the past 2 years to this insidious disease. Both members were military veterans who served their country with courage and diligence. Both men have left large holes in the lives of our members and their families.
This walk is dedicated to these fine Tasmanians.

✨ Please join us in welcoming Phoebe to the Leap Health Coastal Physiotherapy team! ✨

Phoebe is a Tasmanian-based Clinical Exercise Physiologist, originally from Penguin. She recently completed her Bachelor of Clinical Exercise Physiology at the University of the Sunshine Coast, graduating in 2025 after relocating interstate to pursue both academic and high-performance sporting goals.

Throughout her degree, Phoebe gained valuable experience across clinical and high-performance environments. She worked as a Strength and Conditioning Coach with the Queensland Academy of Sport and completed placements in cardiac rehabilitation, Parkinson’s centres, and community gym settings.

Phoebe has a strong clinical interest in neurological and complex conditions, particularly Parkinson’s disease, Multiple Sclerosis, and mental health. She is also passionate about helping children and young adults develop safe, confident, and functional movement patterns. To further expand her expertise, Phoebe is currently completing a postgraduate Diploma of Neuroscience and Mental Health.

Outside of work, Phoebe is an accomplished athlete who competes nationally in surf lifesaving and sprint kayaking. She also remains involved with the AIS program and her local surf club, and in her downtime enjoys reading and hiking.
