Sweetcorn fritters are a great way to add sweetcorn to your diet! See the recipe below:
Corn Fritters Recipe (Makes 2 serves)
Ingredients:
• 130g fresh sweetcorn
• 1 egg whisked
• 50g plain organic flour
• 0.5 tsp baking powder
• 2 spring onions, finely sliced
• 5g fresh coriander, finely chopped
• ½ tbsp extra virgin olive oil
Method:
1. Whisk 1 Egg and then add the plain flour and baking powder.
2. Add Sweetcorn, Spring onions and fresh Coriander. Mix well.
3. Heat Olive oil in a pan and add spoonfuls of the corn batter. Using two spoons, shape into rough circles around 10cm in diameter. Fry for 2 minutes on each side.
4. Serve with a poached or fried egg on top and a side of avocado and mushrooms!
