Evening exposure to blue light at night can send signals to us telling us its daytime and to suppress melatonin production.

Using digital devices such as smart phones, TVs, laptop computers, house lights and even the light inside our fridge are the biggest culprits and emit blue light.

Clinical studies have clearly demonstrated the benefits of blocking Blue light between 400nm and 550nm (the melatonin disruption zone of light)to improve your sleep, before bedtime (around 2-3 hours before bed).

This easy recipe is good for anyone who needs a gluten free, dairy free, vegan or vegetarian diet. Chickpea flour is sometimes sold as besan flour.

Mediterranean Chickpea Frittata 🍅🫒
Serves 2

Ingredients

¾ cup chickpea flour
¼ teaspoon baking powder
¾ cup water
¾–1 cup diced tomato
1 loosely packed cup chopped baby spinach
¼ cup sliced Kalamata olives
¼ cup loosely packed chopped basil (plus extra for garnish)
1 tablespoon extra virgin olive oil
1 cup sliced avocado

Method
In a large bowl, whisk together the chickpea flour, baking powder and water until smooth. Add the tomatoes, spinach, olives, and basil and mix well.

Heat the oil in a pan over medium-high heat. Add the mixture, cover, and cook for eight to 10 minutes until the bottom is golden.

Cover the pan with a large upside-down plate, place your hand on it, and quickly turn the frittata over on the plate before gently sliding it back onto the pan. Cook for an additional five to eight minutes until fully cooked.

Top with sliced avocado and garnish with basil, if desired. Enjoy!
