IT ONLY TAKES 2 minutes to make your own salad dressing half the time and it usually has ingredients you’ve already got in the fridge and panty.
Save this recipe to your SALAD LIST “Italian Caesor Salad Dressing.”
Ingredients
* Olive oil – 180 ml
* Lemon – 1
* Garlic cloves – 2
* Dried basil – 1 teaspoon
* Dried oregano – ½ teaspoon
* Sugar – ½ teaspoon
* Salt – 1 teaspoon
* Red wine vinegar – 90 ml
* Paprika – ⅛ teaspoon
* Onion powder – ½ teaspoon
* Dijon mustard – 1 teaspoon
Method:
- Place a jug on the mixing bowl lid, weigh in the olive oil and set aside. Zest the lemon, avoiding the white pith, then cut in half and squeeze out 2 tablespoons of juice. Set aside.
- Add the lemon zest, garlic, basil, oregano, sugar and salt to the mixing bowl and chop for 3 seconds on speed 8. Scrape down the sides of the bowl.
- Add the vinegar, reserved lemon juice, paprika, onion powder and Dijon mustard. Mix for 2 minutes on speed 4, slowly pouring the olive oil onto the mixing bowl lid so it drizzles in.
- Transfer to a sterilised jar with an airtight lid and store in the refrigerator for up to two weeks.
