Another idea from Jamie Oliver was Gnarly Roast Shoulder of Lamb as he called it. Scored and coated with a curry paste. I used korma. Put on a bed of chopped vegetables and yellow split peas. Water but I used my chicken stock. Roast low and slow for several hours until the bones pull out. Awesome flavour from the curry paste, I would never have thought to use that as a baste. I then had left over veg for the next night and turned the left over peas into a pea and lamb soup. And of course lots of left over lamb.

Sorry I haven't posted my recipes for a while but been a bit off colour.
Made a poached chicken 🐔 not done poached before. So purchased a large 2.8kg chicken and poached. Very nice. I got 3 meals of chicken meat. One out of the scrappy bits I turned into chicken hand pies. Other 2 frozen for use later. Also got 4lt of chicken stock. And of course bones for the 🐕
I have been watching a bit of Jamie oliver so got the idea from him 🙏💕

Ham was good, not as good as the one I did at xmas. Skin off is definitely better for depth of flavour. Being a boneless picnic ham meant i could not remove the skin. So I injected it with some apple juice instead.

Yesterday I cooked Jack Daniels marinated ribeye steaks with crispy potatoes and corn ribs. For dessert and fruit crumble.
The steak was tender and awesome flavour from the marinade.

Well today is Granny's birthday so Pa is helping me smoke a picnic ham for dinner. Our own homegrown pork and our own home butchering.

I've always wanted to try a Crown Lamb Roast and I've had two lamb racks in my freezer waiting for just this moment.
It's not as fiddly as it looks and it is quite simple. I was going to use a couscous filling, but my couscous wasn't suitable to use, only suitable for the bin. So I made a jewelled rice as a stuffing in the crown. Teamed this with a carrots slaw end a panettone bred pointing for dessert and a nice Gilbert Burkes Peak Pinot Noir 2023.
