Ham was good, not as good as the one I did at xmas. Skin off is definitely better for depth of flavour. Being a boneless picnic ham meant i could not remove the skin. So I injected it with some apple juice instead.

Yesterday I cooked Jack Daniels marinated ribeye steaks with crispy potatoes and corn ribs. For dessert and fruit crumble.
The steak was tender and awesome flavour from the marinade.

Well today is Granny's birthday so Pa is helping me smoke a picnic ham for dinner. Our own homegrown pork and our own home butchering.
So I will let you all know how it turns out.

Parmesan crusted salmon with braised slaw.
Put left over carrot slaw to good use and braised it as a side for my salmon.

I've always wanted to try a Crown Lamb Roast and I've had two lamb racks in my freezer waiting for just this moment.
It's not as fiddly as it looks and it is quite simple. I was going to use a couscous filling, but my couscous wasn't suitable to use, only suitable for the bin. So I made a jewelled rice as a stuffing in the crown. Teamed this with a carrots slaw end a panettone bred pointing for dessert and a nice Gilbert Burkes Peak Pinot Noir 2023.

Every year I buy the wine selectors calendar box and make that month's recipe each month of the year.
So last night we had the January recipe, my version.
Popcorn Prawns with spicy Mayo and a citrus salad and Orange Vinaigrette paired with a Howard Park Margaret River Semillon Sauvignon Blanc.
A very smooth wine at the meal was awesome 👌
Dessert was An Coconut Orange Glow 🍊, it tasted very nice but I couldn't get it too set. It was all meant to complement each other with the orange flavour throughout the whole meal.💕

Family Fun and the Farm at Frog Hollow 💕
Food has been absorbed week of pork.
2 whole pork racks Monday, shredded pork shoulder Tuesday, pulled pork pizza Wednesday and pork loin and ham on Thursday. Friday as everyone was leaving we settled for prawns for breakfast. 😋
