This is my first post for 2017 for Wild Orange, so officially Happy New Year everyone! Iβm super excited about what 2017 has in store for us all!
Coming back from holidays to find two bags of carrots in the veggie crisper with the beginnings of a more than a 5 oβclock shadow and young shoots sprouting through the heads and tiny roots peeking through the skin,β¦ what to do? Always a believer of no wastage, thanks to my beautiful Mumβs knack for whipping meals up with whatever was in the fridge or on hand, I decided to make a carrot slaw.
This is a refreshing colourful salad and makes a great side dish and can liven up your leftover meals as well. Add to a Buddha Bowl or is a great accompaniment with wraps.
With no specific recipe to follow, I peeled the carrots, blitzed them up in the food processor shredding them. As bulky as it is, itβs days like this that I am grateful for this kitchen appliance where I can save time with food prepping.
Place the shredded carrots into a bowl and mix together with the following;
1x medium size red onion, very thinly sliced
1x large Granny Smith apple, blitzed in food processor
4x oranges, peeled and segmented. The juice from the remains of the orange I squeezed over the salad mix.
Juice of a lime
Juice of a lemon (next time I will use a second lime in place of lemon as I found was too acidic)
1x tablespoon ginger, grated and juiced (use juice only discard the fibre)
1x large handful of flat-leaf parsley finely chopped
3x Pears, overripe, grated then I squeezed the juice from that over the salad mix. One of the pears was still firm enough for me to squeeze the juice from it and I added the grated flesh into the salad mix.
+ the main ingredient - almost two full bags of carrots
Make ahead of serving time to allow the juices to come together and to flavour the whole dish. It tastes even better the next day. My recipes are made on taste so no set measurements in this slaw, just trust your heart, your eyes because presentation matters and most of all, trust your taste buds!
Hereβs to promoting eye health with said bags of carrots which could have been destined for the worm farm but were saved for a couple of meals! βΊ
