Fresh out of the oven are these Zucchini & Sweet Potato Slices made from homegrown zucchinis harvested from our veggie garden this morning. It's packed full of goodness with zucchinis, sweet potato, red capsicum, parsley, mushies and a bit of bacon.
Looks like lunches and snacks are sorted for the next few days.βœ…πŸ‘ŒπŸ½πŸ˜Š

All hail the awesome avocado πŸ₯‘!! When you score avos for less than a dollar each you go avo-nuts and buy as many as you can! WINNING! 😁

These avos are beginning to slowly ripen nicely under our bananas in the fruit bowl.

Whenever I have an abundance of avocados (as with any other seasonal fruit) I peel and cut them up and freeze them so they don't rot and go to waste.

I love adding frozen avocados into my smoothies to give it a creamy texture and for a daily dose of healthy fats and added fiber. Avocado dressing, pesto, guacamole, salsa and in salads are a few other ways I enjoy this nutritious fruit. What are you favourite recipes for avocado?

Adding to my repertoire of handmade jewelry is this Viking Knitted Beaded Bracelet with a Tiger Eye semi-precious gemstone using artistic wire and a magnetic clasp. This is an ancient technique which dates back to … you got it … the Vikings! 😁

The prototype I made is no where as wearable as this even if I did wear it, but as they say..."practice makes perfect!" 😁

This is my first post for 2017 for Wild Orange, so officially Happy New Year everyone! I’m super excited about what 2017 has in store for us all!

Coming back from holidays to find two bags of carrots in the veggie crisper with the beginnings of a more than a 5 o’clock shadow and young shoots sprouting through the heads and tiny roots peeking through the skin,… what to do? Always a believer of no wastage, thanks to my beautiful Mum’s knack for whipping meals up with whatever was in the fridge or on hand, I decided to make a carrot slaw.

This is a refreshing colourful salad and makes a great side dish and can liven up your leftover meals as well. Add to a Buddha Bowl or is a great accompaniment with wraps.

With no specific recipe to follow, I peeled the carrots, blitzed them up in the food processor shredding them. As bulky as it is, it’s days like this that I am grateful for this kitchen appliance where I can save time with food prepping.

Place the shredded carrots into a bowl and mix together with the following;

1x medium size red onion, very thinly sliced
1x large Granny Smith apple, blitzed in food processor
4x oranges, peeled and segmented. The juice from the remains of the orange I squeezed over the salad mix.
Juice of a lime
Juice of a lemon (next time I will use a second lime in place of lemon as I found was too acidic)
1x tablespoon ginger, grated and juiced (use juice only discard the fibre)
1x large handful of flat-leaf parsley finely chopped
3x Pears, overripe, grated then I squeezed the juice from that over the salad mix. One of the pears was still firm enough for me to squeeze the juice from it and I added the grated flesh into the salad mix.
+ the main ingredient - almost two full bags of carrots

Make ahead of serving time to allow the juices to come together and to flavour the whole dish. It tastes even better the next day. My recipes are made on taste so no set measurements in this slaw, just trust your heart, your eyes because presentation matters and most of all, trust your taste buds!

Here’s to promoting eye health with said bags of carrots which could have been destined for the worm farm but were saved for a couple of meals! ☺

In a bid to combat the acid war in my body I am more conscious than ever of what I am ingesting.

My aim is to help neutralize the acid, alkalize the body, stabilize and raise my pH levels, bringing it in line with the recommended 7.4pH+ range to bring my body back into balance and function more efficiently.

Six days ago I tested my pH levels and it was at a real low of 5.5pH, that's a highly acidic state. Today my reading is now a 6.2pH. This improvement has been with the help of not only eating a high alkaline diet but also with the help of a daily course of Safe Soda.

I am leaning towards a more alkaline lifestyle which means more veggies on top of the already high veggie meals I already enjoy and having quinoa and blanched veggies already cooked and stored in the fridge makes meal preparations a no-brainer.

Here's a Buddha bowl I threw together for lunch. Quinoa topped with blanched broccoli, steamed corn, fresh mung beans, radish, avo, chickpeas with a dollop each of my homemade beet + basil & spinach pesto! Voila! Lunch sorted!

Is the Summer heat affecting your way of eating? Are you tired of feeling sluggish and looking for cooler lighter meal alternatives? Here's a quick easy recipe to follow. Zoodles with Vegan Basil Pesto.

With the recent hot Summer weather we've had a change in tastebuds with a hankering for cooler lighter meals.

We've returned to our plant based meals and what better way than to have it raw.

This week it was freshly spiralized Zoodles (zucchini spaghetti) with my homemade Vegan Basil Pesto.

Super quick & easy to make and very tasty!

Here's the recipe for the pesto, it's vegan friendly so is dairy-free (yep, no parmesan cheese πŸ§€ in it) but lots of fresh basil and spinach.

Not one for skimping on flavour I added some Vegetarian Nutritional Yeast to the recipe to give it a savoury punch so I can now call it 'my own' in line with a running family joke. 😁
