Busy schedule? You don’t have to sacrifice quality food. These Ham, Tomato & Pesto Muffins are quick, easy, and perfect for busy mornings or grab-and-go snacks!

Serves: 6
INGREDIENTS:
1 tsp olive oil
12 eggs
150g ham, chopped
250g cherry tomatoes, halved
½ tsp salt
½ tsp pepper
½ cup basil pesto
METHOD:
1. Preheat oven to 180°C and grease a 12-cup muffin tray.
2. Whisk eggs, then mix through ham, tomatoes, salt, and pepper.
3. Fold in ¼ cup pesto, pour into tray, and top each with remaining pesto.
4. Bake for 20 minutes or until set.
