My go to weeknight fish recipe that’s packed full of healthy fats and flavour!
Peanut Miso Fish
Ingredients
100g crunchy peanut butter
60g miso paste
3 tbsp sesame oil
1 tbsp honey
15g ginger, peeled and grated
2 garlic cloves, peeled and grated
Juice of 1/2 a lime
4 x white fish fillets (no skin, ~600g), such as coral trout, nannygai or barramundi
1 tbsp sesame seeds
1/4 cup chopped peanuts
1 chilli, sliced
Method
1. Preheat oven to 200 degrees Celsius (fan forced).
2. In a small bowl, mix the peanut butter, miso, sesame oil, honey, garlic, ginger and lime.
3. Tear 4 large sheets of aluminium foil. Place fish in the center of each foil sheet. Spoon over 1/4 of peanut miso mix over each fillet. Fold the foil into a peak and pinch in the sides.
4. Place on a baking tray and place in the preheated oven for 20 minutes, or until cooked through.
5. Unwrap foil, remove fillets and divide among plates. Serve sprinkled with sesame seeds, chilli and chopped peanuts.
6. Serve with brown basmati rice and steamed greens.
