update. 8 new recipes ticked off over the last month or so.

1. Italian stuffed pork tenderloin - really tasty, a bit fiddly.

2. Brownie Cookie - made these for a Mothers’ Day afternoon tea and they disappeared so quickly I don’t get to try one. Apparently they’re good.

3. Spinach & Feta Borek - I did the traditional recipe version and they were great. Kids liked them cold in their lunchbox the next day

4. Slow Baked Italian Meatballs - amazing, so soft and delicious. Perfect wintery day food.

5. Prosciutto wrapped pork with Greek lemon potatoes. Anything with prosciutto is a winner in my book and I love a one tray meal.

6. Black Bean Chilli - really easy and really tasty. Filling and satisfying meat free Monday meal.

7. Chicken Guinness Stew - I really liked this but the kids didn’t like it much and I don’t really know why. Maybe a bit bitter for them?

8. Strata (Cheese Bread Casserole) - our first ‘miss’, none of us really liked it but I wasn’t surprised as it’s not a texture we are into. Flavours were good but I’d rather just make a quiche.

Feeling like I’m nearing the end of this challenge already! 40 to go but that includes a lot of sides, dressings and desserts.

Possible the worst quality photos of the whole but given I’m usually snapping just before we eat I don’t spend much time and risk serving cold food. They will have to do!

Not in the order we ate them…and maybe not in the order they are posted but here they are.

1. Easier meat pies (pg93). I tripled the recipe so I have plenty of pie mince in the freezer for post soccer winter lunches. These were delicious. We had them with pea purée (pg333) worked well with the salty rich filling.

2. Amazing pantry tomato soup (pg 128) with Parmesan toasties (pg328). We call this ‘sizzler toast’ in our house as Dan remembers having something similar at Sizzler as a kid. Really great combo. Fantastic on a cold rainy night.

3. Chinese chicken with mushroom sauce (pg148). Probably my favourite ‘Charlie’ based meal so far.

4. One-pot pizza Mac (pg188) - easy, tasty, fun. Need a zingy green salad on the side.

5. Golden chicken noodle soup (pg44) more popular than I expected, full of flavour even though I forgot the ginger.

6. Mini meatball soup (pg102) - contender for worst photo but was pretty tasty. Kale in soup is surprisingly amazing.

7. Quick salmon red curry…actually this photo is worse. Last one in ‘The Fastest Recipes’ chapter. Bit spicy for one of the boys and another one isn’t a big salmon fan but Dan & I enjoyed it!

Chipping away and still enjoying e challenge. Hoping to do a few more from the ‘Sunday Suppers’ in the holidays as these are bigger with more prep and longer cook times.

Cinnamon Tea Cake pg306 about to go in the oven to celebrate my son’s 14th birthday.

He is my most ‘sweet-toothed’ kiddo so a cake that comes with a ‘this little number is quite sweet’ warning is probably perfect for him.

Vietnamese Pulled Pork Feast ticked off 7 recipes for my over the weekend.

The Vietnamese Coconut Lemongrass Pulled Pork pg284 was delicious!! Hands off until the last part when you reduce the sauce and fry the shredded meat. Really tasty, we had it as noodle bowls pg286 the first night with Peanut Sauce pg289, quick Asian pickles pg317 and chilli lime dipping sauce pg289 and it was a fantastic combination. That peanut sauce was incredible and so simple.

Plenty of leftovers that we had as Bahn Mi pg287 last night but I forgot to take a photo and there was still some meat leftover so I made myself some Rice Paper rolls for lunch. (Pg288)

This is a winner and I will definitely be making at again in the future.

Few more added to the ‘done’ list ✅ on my

1. One pot Cajun chicken and rice. Pg 196 - super easy and tasty, good for a midweek meal and reheated nicely for lunch the next day.

2. Salsa verde with Roasted Baby Potatoes (pg233) we had these with some bbq lamb chops and salad and it was a lovely meal.

3. The Aussie Chop salad, perfect no cook (used a bbq chook) high vege dinner on a super hot night with some toasted Turkish bread.

By my count I’m 83 down, 79 to go but with the Vietnamese Pulled pork in the oven and several sides to be made with it tonight I get to tick off 6 in one hit.

In today’s episode of my ‘lunch for one’ series we have Spicy Ginger Noodle Soup.

Really tasty, I’ll make a big batch for a family meal at some point as they will all love it but it was not an excellent ‘quick lunch’ choice. Too much time to cook and a bit slow to eat and so, so many dirty pans and bowls, especially as I had to make my own Chinese 5 spice as I realised too late I was all out.

Now to clean the kitchen to get ready for making dinner. It’s endless.

A week of lunches. One of the big perks of working from home.

Ticking off a few quick ‘serves one’ recipes this week.

1. Chinese Sweetcorn soup pg153 - yummy on a rainy day. This actually is a 2 person recipe so I had the leftovers the next day and they reheated really well.

2. Vietnamese pizza pg116 - this was a complete surprise, a recipe I would have skipped if not doing the challenge and I would have been missing out. So quick, so tasty. I made 2 for my lunch (one is not enough for for me) and then did them again the next day with some flavoured hard tofu I had in the fridge. Amazing, these will become a regular lunch and great afternoon tea for the kids.

3. Spicy peanut noodles pg113 - really yummy but quite rich and heavy on their own. Would make an excellent side dish to some bbq meat and a cucumber salad.

Have a couple more ‘one serve’ things planned for lunches next week next week and plenty of dinners and desserts still to tick off over the next few months.

I was going to try and keep up, but I didn’t, so here’s another photo dump.

1. Summer salmon with mango salsa (pg262). This was delicious, easier and less fiddly than the Christmas Salmon from the first book. A lovely summery outdoor dinner with special friends.

2. Baked fish with Golden Coconut Sauce (pg186). Super easy and tasty, I used some lovely fresh ling fillets and threw in a bunch of beans right near the end to boost the vegetable content.

3. Messy and unappetising to look at but the chicken and gravy rolls (pg46) were pretty great.

4. One pot chicken tomato pasta (pg176). Cheesy, tomato-y deliciousness. This was really easy and a great mid week meal. Everyone gobbled this one up.

I’m well@over halfway and on track to finish by my October 30 deadline.

Almost caught up.

1. Slow roasted middle eastern lamb shoulder (pg251) This was incredibly tasty. I added a tomato salad for freshness. The lemon herb couscous was zingy and delicious but you could skip it and just serve it with flat breads and a squeeze of lemon. Will make this one again.

2. Strawberry Swirl Shortcake (pg292). Looked terrible as I was impatient and didn’t wait for the cake to completely cool before icing so the cream started to melt and slide off but it was delicious. Perfect summer afternoon tea for .doris in early January.

I also made the Tahini Drizzle Sauce with Charred Broccolini (page 236) as a side with steak and roast potatoes but forgot to take a photo. Was really tasty and will definitely make it again.

I think I’m all caught up now, and will just keep cooking.

Fantastic morning out exploring trails. I’ve avoided trails due to a dodgy ankle but decided to give it a crack. A planned 13km fire trail out & back turned into a much more interesting and pretty but technical and tricky 15k that left me underfueled & under hydrated but it was worth it.

Looking forward to exploring more trails this year.
