As a small festive touch, we’re sharing a simple Christmas favourite from our team:
Chocolate Mint Slice

Chocolate Mint Slice
Ingredients:
• Base
• 250 g plain sweet biscuits
• 125 g butter, melted
• 2 tablespoons cocoa powder
• Mint Layer
• 2 cups icing sugar
• 60 g butter, softened
• 1–2 teaspoons peppermint essence (to taste)
• 1–2 tablespoons milk
• Chocolate Topping
• 200 g dark or milk chocolate
• 1 tablespoon coconut oil or butter
Instructions:
1. Prepare the base:
Crush biscuits finely and combine with melted butter and cocoa. Press firmly into a lined slice tin and refrigerate to set.
2. Make the mint layer:
Beat icing sugar, butter, peppermint essence, and milk until smooth and spreadable. Spread evenly over the base and return to the fridge until firm.
3. Add the chocolate topping:
Melt chocolate with coconut oil or butter until smooth. Pour over the mint layer and spread evenly.
4. Chill and slice:
Refrigerate until fully set. Slice into squares using a warm knife for clean edges.
