Settled on making Napoli dumplings for dinner cos I knew I had ricotta in the fridge and I didnāt want to go to the shops. Got to the cooking time and my ricotta is out of date. Itās ok I can make some, nope havenāt got enough milk. So Iām opening fridge and pantry⦠nothing that constitutes a meal. Whatās my go to? Risotto! Got no meat so Iām like ok a vegetarian risotto. No suitable veg except some wilting capsicum. No one in my house likes capsicum. Hmm tomatoes and capsicum? Ok Iāve got bacon in the fridge, tomato risotto with capsicum and bacon it is! Nope bacon is out of date too! No meat, no baconā¦. Tempted to msg hubby but heāll just tell me off for being unorganised again š¤Ŗ. Start cooking the capsicum strips on high heat. Scrummage in the freezer! Ooh I see some chorizo in a bag! A few bags! Oh the chorizo is in frozen bags of Skinnymixers smoky baked beans! Hmmm can you put baked beans into risotto? Quick google.
Turns out you can! Smoky Tomato and capsicum risotto with beans and chorizo coming right up!
So Iāve got my capsicums browned on intense high heat, now they are caramelised and slightly charred. Jump into the mushroom risotto recipe but instead mushroom we divert! Onions, 3 garlic cloves - cos we measure that with the ā¤ļø rice is in, donāt have wine, throw in a leftover half punnet of grape tomatoes for good measure, chicken stock paste, a tin of tomatoes, water to make up the measurements. A shake or so of paprika. Cook for ten mins. Add my baked beans mix. Cook another three mins. Found some half used sour cream in the fridge, throw in cheese - cheese is life! Leave to restā¦..
