Sunday brunch 😋

Scrambled tofu - zero cholesterol, low saturated fat, high fibre, plant protein and iron 💪🏽 It’s all in the flavourings! This version has garlic, spring onion, cumin seeds, smoked paprika, turmeric, nutritional yeast, lemon juice, chilli and parsley. Served on a bagel with avocado and coconut sriracha - winner!!

So addicted to these black bean chocolate brownies by . Vegan, gluten free, high fibre, magnificent!

2 tbsp ground flaxseed
6 tbsp water
400g tin black beans, drained and rinsed
3 tbsp olive oil
3/4 cup cacao powder
1/2 cup raw sugar
1 tsp vanilla extract
1 1/2 tsp baking powder
Mix the flaxseed and water and let it sit for about 5 minutes.
Blend all the ingredients in a blender or food processor until smooth.
Spoon mixture into a lightly greased muffin tray.
Top with walnuts and/or dairy-free chic chips if you like.
Bake at 175 degrees celcius for about 25 minutes.
Let them sit in the muffin tray for about 1/2 hour before carefully removing them with a knife or fork.
Serve with vanilla ice cream 😋

Dan Dan Noodles recipe from her cookbook Vegan With Bite. If you like it spicy these are for you! The sauce is addictive consisting of tahini, light soy, rice vinegar, Chinese five spice, ground Sichuan peppercorns (I used white pepper), garlic, sugar and Sichuan chilli oil (I just used Chiu Chow style chilli oil from Coles).

Dahl would have to be my favourite way to eat the humble red lentil. Red lentils are packed with protein and fibre, and offer good amounts of iron, magnesium, B vitamins and zinc. And they’re really really cheap!

I don’t follow a recipe but this one had onion, garlic, fresh ginger, green chilli, whole spices (cumin, fennel, nigella, mustard, fenugreek), korma curry paste, red lentils, vegetable stock, fresh tomatoes and baby spinach. I cook it a bit like a risotto, gradually adding vegetable stock (or you can use water and season at the end if you prefer) until the lentils are soft. You can use ground spices instead of paste but I find I get better flavour with a curry paste.
