Honey has been hard to come by this season but we are now able to offer 3 delicious batches. All our honey is pure raw honey.
1. MANSFIELD. A Fresh medium amber honey, Harvested mid January from our near town hives.
2. HIGH COUNTRY: Messmate with a touch of mountain Ash. A darker richer flavoured honey. If you prefer a stronger honey this may be the one for you.
3. CHRISTMAS: Another medium amber honey sweet and sharp. Direct from my sons hives.

Honey has been hard to come by this season but we now have a new batch of local Mansfield honey.
Medium Amber in colour this is a mid range poly flora honey. You cannot buy fresher or more direct
In addition we have some messmate/mountain ash honey from the high country. Somewhat darker with good mineralisation, if you like a stronger flavored honey this might be the one.
We also have some malleee Eucalypt honey. Its lighter than the others but still robust.
If you'd like to do a taste test your are welcome. Please let me know.

Finally harvesting today Jan 9 2025. Approx 50 kg from 3 hives.

A compost bin is not a good place for a bee hive so we moved them in to a nucleus hive for a resident. Seems to be quite a small swarm. Probably been there about a week or 10 days.
they objected to being messed with and the queen ended up a tree with (about) half the hive. A little ladder work and some pruning and I'm pretty sure "Madam" in the box.

Agriculture Victoria has confirmed Varroa mite has been detected for the first time in Victoria at a property in Nangiloc near Mildura.
The infested hive was identified during Agriculture Victoria's surveillance activities which are carried out each year during almond pollination.

𝐇𝐨𝐧𝐞𝐲 𝐋𝐢𝐦𝐞 𝐂𝐡𝐢𝐥𝐥𝐢 𝐃𝐫𝐞𝐬𝐬𝐢𝐧𝐠
This quick and basic dressing suits salads, vegetables and desserts.
Microwave the honey for about 15 seconds (not more than 20 seconds as honey can burn) in the microwave.
Combine:
2 tsp Wild Hive "Pure Local" honey.
Juice from half a lime
Sprinkle of chilli powder or a 1 tsp Chilli oil. (or both!)
Chilli component can be increased or decreased to suit your pallet or application.
Place steamed Veg in a serving dish and liberally drizzle with dressing.
Serve immediately.
This amount will suit vegetables/salad for 4 - 6 people
Mix dressing with cream or yoghurt as a topping or drizzle over a fruit filled pastry for a tasty dessert.
