Enjoy a hit of summer vibrancy and boost your wellness with homemade basil pesto 💚
2 generous cups of firmly packed basil leaves
1/3 cup almonds or pine nuts
1 or 2 gloves of garlic (to taste)
Juice of half a lemon
Pinch of salt
1/2 olive oil, plus additional as needed
Optional - 1/2 cup finely grated parmesan cheese
Additional:
2 or 3x small glass jars, sterilized with boiling water and allowed to air dry.
Add salt, nuts, garlic, salt (and parmesan if using) to food processor, blitz until finely chopped.
Add in juice of lemon, a generous dash of olive oil and 1/4 of basil leaves. Pulse until the mix comes together.
Continue to add generous dash of olive oil and 1/4 basil leaves until all used, pulsing the food processor to combine and desired consistency.
If needed additional olive oil can be added to loosen the pesto.
Spoon pesto mixture into dry and clean glass jars, removing any obvious air bubbles, top with small drizzle of olive oil and seal with lid. Can be kept in the freezer to maintain freshness.
