Enjoy a hit of summer vibrancy and boost your wellness with homemade basil pesto 💚

2 generous cups of firmly packed basil leaves
1/3 cup almonds or pine nuts
1 or 2 gloves of garlic (to taste)
Juice of half a lemon
Pinch of salt
1/2 olive oil, plus additional as needed
Optional - 1/2 cup finely grated parmesan cheese

Additional:
2 or 3x small glass jars, sterilized with boiling water and allowed to air dry.

Add salt, nuts, garlic, salt (and parmesan if using) to food processor, blitz until finely chopped.
Add in juice of lemon, a generous dash of olive oil and 1/4 of basil leaves. Pulse until the mix comes together.
Continue to add generous dash of olive oil and 1/4 basil leaves until all used, pulsing the food processor to combine and desired consistency.
If needed additional olive oil can be added to loosen the pesto.
Spoon pesto mixture into dry and clean glass jars, removing any obvious air bubbles, top with small drizzle of olive oil and seal with lid. Can be kept in the freezer to maintain freshness.

Summer vegetables in a jar 💚

If you have an excess of cucumbers (or zucchini), try this simple pickle recipe to help preserve the freshness of late summer well into winter.

Ingredients:
5 large cucumbers (or medium zucchini) finely sliced
1 medium brown onion, halved and finely sliced
1 ½ cups apple cider vinegar
¾ cup brown sugar
Cooking salt
1 T coriander seeds
1 T yellow mustard seeds
1 t turmeric powder
½ t peppercorns

Additional:
2x large glass jars (or 3x medium), sterilized with boiling water and allowed to air dry.

Method:
Combine finely sliced cucumbers, onion and 2 T of cooking salt in a bowl, leave covered with a tea towel for a few hours. When ready, transfer to a colander, drain off excess moisture and rinse thoroughly with cold water to remove excess salt.

Combine apple cider vinegar, brown sugar, and spices in a saucepan. Cover with lid and bring the mixture to a simmer.

Meanwhile, stuff your clean glass jars with the cucumber and onion mix.

When the pickle mix is at a simmer remove from the heat and pour mixture directly into your glass jars right to the very top. Place lids on the jars and invert for 2-3 minutes to allow the jar to seal.

Let the pickles 'rest' and the flavours develop for at least one week before opening.
