It was such a nice day & Lamb on special.
So, I decided to smoke some &
Apple Wood chunks with a temperature of about 60.
Cold smoke.
2hrs for the chicken
About 7hrs for the Lamb.

Sealing and rendering my Rump Cap (Picana) with Tassie Tallow grassfed beef dripping.
Then, I finished off in the airfryer 15-20 mins.

So tender cut across the grain.
