Happy Sunday everyone😊
I have been a little quiet on wholesome you and I went away on a little trip to the Whitsundays!!
It was such an amazing trip and I am so grateful I got to go away for a few days.
I ask the question today of ‘what makes you happy.’ So many people do what’s required of them but do you do things that actually light you up?
These don’t have to me anything huge it could be the little things like a cup of tea outside or reading for 10 minutes.
Making time for yourself is something I have grown to do as I used to never prioritise myself.

Grilled veggie flatbread 🌯
These are my favourite flatbreads! My mum makes them the best and it’s been on repeat this year so far 😍
Flatbread we used chickpea flour, tapioca starch and oat flour. Mix with oil and yoghurt to form a ball. Roll and fry on the pan.
Filling:
Grilled eggplant
Grilled zucchini
Tomato
Kale
Red onion
Mint yogurt dressing
Super delicious and full of flavour!!

Summer Salad ☀️🥗
Salad have such a bad stigma too it of being lettuce and some random pieces of veggies. I’m here to show you how delicious and nutritious they can be!!
Here is my go to summer salad:
- chickpeas
- sautéd kale
- cucumber
- tomato
- red onion
As simple as that 🙌🏼
I usually add also quinoa or feta depending on how I feel.
Use colours, new vegetables to explore texture and taste.

Simple is best ✨🙌🏼
Everyone talks about eating simple and whole foods but what really is that?!
Eating simple means foods that don’t have lots of ingredients.
Wholefoods are foods that are closest to the way they are grown such as fruits, vegetables, nuts and seeds.
Here is a lunch I made up that showcases exactly this. Sautéed kale, grilled halloumi, scrambled eggs with red onion and roasted pumpkin with some Greek yoghurt.
These foods didn’t require to be pre cooked or thawed out of a packet. Just fresh foods leftover in the fridge and cooked in a pan or oven.
Let’s stop over complicating foods and how to eat them. Just eat what feels good and what you enjoy that’s how life was meant to be.
