Ft. on the making of Garganelli - only pastable to be rolled by hand. An ancient shape invented c.1725 for the Cardinals. It may look like Penne (extruded by machine), but Garganelli is Penne's wealthy cousin. Garganelli reaps the benefit of the textures of the tools used to make it; the wooden counter and rolling pins and the Pettine itself impart a rough surface that holds sauces better than the smooth surface of machine made Penne.

Not one to give up easily, especially when it came to her food obsession, Anliette persevered.
Spending her nights glued to a screen, researching, drooling and imagining, she was relentlessly determined to create a keto-friendly, low-carb, dairy-free noodle variety that still had that satisfying mouthfeel.
She explored the pastabilities - she experimented, tested, tasted and salivated. She sent her friends many a noods to savour. "I prefer this than normal pasta!", one of them said.

Beginnings / The Hunt:
Like many others, she found comfort in food and made the life-changing decision to battle the pandemic-induced wobbles (affectionately known as 'corona kilos') by adopting a diet.
But alas, the battle to find a close replacement for her much-loved noodle dishes was even greater.
She gave it her all, desperately searching for the PERFECT (and healthy) rebound noodles. Zoodles, cauliflower rice, almond flour pastas, shirataki noodles… they just didn't cut it, they were all impastas.
Pasta la vista, baby. 👋🏻
But this was just the beginning to a delicious, noodle-bound love story. 😋
