I attended the best gluten-free sourdough bread-making masterclass a few weeks ago at 'Eat Cannoli' in Preston. Pictured is my first loaf from dough, dutch oven to cooling rack, using Dom's 8-year-old starter and 'WELL & GOOD'S' crusty bread mix. It was absolutely delicious and I highly recommend this experience. Book now to secure your place: https://www.eatcannoli.com.au/

"Gōng Xǐ Fā Cái" - Year of the Yang Fire Horse.
In Chinese astrology, the Horse is known for its confidence, intelligence, responsibility and independence. The Fire element adds a fast-paced transformative dynamic, characterised by intense energy, passion and ambition to chase our goals towards independence. It encourages bold actions and represents a breakthrough for many, with rapid progress regarding big life changes, yet also carries the risk of burnout if not managed with wisdom and self-care.

Yintang, known as the 'Hall of Impression' or 'Third Eye,' is a powerful Traditional Chinese Medicine (TCM) acupoint located midpoint between the medial ends of the eyebrows (glabella). It can be either needled or massaged by applying light finger or thumb pressure, or wiping upwards towards the hairline to calm the 'Mind' and induce immediate relaxation for managing anxiety and insomnia, and effectively clearing frontal headaches, vertigo and sinus pressure or congestion in conjunction with other acupoints.

Ear Shenmen (Spirit Gate) is a crucial acupuncture point for calming the 'shen' (spirit/mind), reducing anxiety, improving sleep and alleviating pain by balancing the nervous system to promote homeostasis. Located in the triangular fossa of the upper ear, it's a key point in Traditional Chinese Medicine (TCM) for mental health and well-being. It's used with needles or ear seeds for continuous gentle pressure to calm the mind to reduce stress, anxiety, tension and overthinking. It improves sleep by promoting relaxation to help with insomnia. It can alleviate both physical and emotional pain, including headaches, and it rebalances our emotions to foster a sense of centeredness and well-being.
Note: It's one of the five points in the NADA protocol to manage drug and alcohol cravings and withdrawals.

Ren-17 (Shanzhong) is the Front-Mu point of the Pericardium (protector of the heart), located on the midline of the sternum in the depression level with the fourth intercostal space, and is known as 'Chest Centre' or 'Upper Sea of Qi.'
In Traditional Chinese Medicine (TCM), it's used to regulate qi, unbind the chest and descend rebellion of the Lung and Stomach. This translates to opening the airways for breathing issues like cough, asthma and chest congestion, calming the heart to reduce anxiety, stress and chest pain, aiding digestion to resolve acid reflux and vomiting, and benefiting the breasts to support lactation. It can be activated using needles, guasha or with massage combined with deep breaths.

TCM dietary advice can start with learning food energetics, listening to our bodies, and using food as medicine to create internal harmony. We often recommend warm, cooked meals from fresh, whole ingredients while avoiding extremes.
Basically, foods are either cooling (Yin) or warming (Yang), and with simple education, you can adjust your current food intake to assist in rebalancing your qi.
We often recommend reducing or avoiding Cold/Raw foods like iced drinks, large raw salads, etc, and Damp/Greasy foods like dairy, deep-fried, and oily foods as these can weaken Spleen Qi affecting digestion.
We also suggest avoiding excess Pungent/Spicy/Heating foods like chilli (unless needed to expel dampness in hot climates), sugar, alcohol, and highly processed foods as these cause inflammation.
With the end goal of moderation to enjoy all foods, we advocate eating slowly in a peaceful setting, chewing well, and stopping at about 70% fullness.

A young man once asked a wise monk how to stop overthinking. The monk replied, "It's because your mind is trying to defend itself from the imagined fears of tomorrow. Yet who can see tomorrow? Any glimpse into the future is only the product of your imagination. If your imagined troubles are produced by the mind, and the mind works tirelessly to come up with solutions, it becomes like the cat chasing its own tail.
The remedy for this is twofold. First, recognise that our thoughts are not reality. The vast majority of our worries never come to pass. Second, accept that the future will bring what it will bring, release what is out of your control, and then do what you can with whatever comes. By this twofold action, your mind transforms from a cat chasing its own tail to become a mighty river embracing and flowing with whatever is in its path.
Recognise that your mind seeks solutions to its own imagined problems. Trust in the future. Do the best with what is in your control and let go of the rest...
This is the way."

Acupuncture can help to reduce scarring by improving blood flow, promoting collagen production, softening hardened tissue, and reducing pain and itching. Fine needles are inserted directly on (pictured) or surrounding scars to break up adhesions, encourage skin renewal, and reduce colouration.
