🍫🥒 Chocolate Chip Zucchini Loaf Recipe 🥒🍫

✨ Ingredients:
2 medium zucchinis, grated. Squeeze the excess moisture using a clean towel or cheesecloth
2 cups plain flour
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
¼ teaspoon salt
¼ cup shredded coconut
2 large eggs
1 teaspoon vanilla extract
1 teaspoon (honey if you want sweetness)
½ cup chopped nuts (I used pecan nuts)
1 cup Noshu chocolate chips (or more if you love chocolate and not watching calories 🤣)
✨ Instructions:
Preheat your oven to 175°C.
Place baking paper in a loaf pan.
In a large bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, nuts, 1/2 the choc chips, shredded coconut and salt.
In another bowl, whisk together the eggs and vanilla.
Stir in the grated zucchini, then slowly mix in the dry ingredients until combined.
Fold in the chocolate chips.
Pour the batter into the loaf pan and bake for 45 minutes or until a toothpick comes out clean.
Let it cool in the pan for 10 minutes, then transfer to a wire rack.
